It feels good to know that children are learning to eat healthy in schools. My daughter has taken food and nutrition class and her homework this week was to keep a food journal. She wrote what she ate in the past week and for one day she was challenged toΒ eat as naturally (food without additives) as possible. She gave me some options to prepare the next day’s meal using food pyramid.
We both went grocery shopping and there we realized how hard it was to shop for natural foods. All the isles were overflowing with processed and boxed foods. My daughter read every label of the boxed food that we picked. At the end we came back with fresh fruits, vegetables, fish and food products with short ingredient list.
For breakfast I made crepes which were then smothered with honeyed yogurt and a layer of fresh fruits. For lunch I baked salmon and served over lentil and quinoa salad (will post the recipe soon). We get the best farmed salmon in BC. Dinner was light mushroom soup. all day my daughter fueled herself with snacks like cheese, nuts, seeds and veggies with yogurt dip.
GlutenFree Eggless Crepes with Honeyed Yogurt and Fresh Fruits
Ingredients for crepes
3/4 cup GF all purpose flour
1/3 cup almond meal
3 tsp ener g replacer ( I realize this wasn’t giving me good result so I also added 1/2 tsp flax meal)
1/4 tsp himalayan pink salt
1 cup organic milk
1/4 -1/2 cup water
1 tbsp oil
Honeyed Yogurt
1 cup unflavored thick yogurt
2 tbsp honey
1 tbsp orange zest
fresh fruits to serve
Method
Combine Gf all purpose flour, almond meal, ener g replacer, flax meal and salt in a bowl.
Add milk, 1/4 cup water and oil. Mix well with no lumps. Refrigerate for 1/2 an hour or overnight.
Before cooking crepes, check the consistency of batter. Add water if you find it too thick.
Heat a 8-9″ non stick griddle over medium heat. Spray with cooking oil or brush a very thin layer of oil.
Drop 1/2 cup of batter all around the pan to make a circle (swirling the pan won’t work with this batter). Don’t worry if they don’t come out a perfect circle.
Allow the crepe to cook until lightly browned. Peek to check if it is cooked.
Flip the crepe with gently and cook the other side.
Once cooked place it on a plate and do the same with the rest of the batter, oiling very lightly.
Spread honeyed yogurt on crepe, layer with fresh fruits, fold and serve.

Actually she did. The batter is easy to mix at night and just takes half an hour in the morning to fix the whole breakfast.

Not only is it a great lesson for our children but we learn from it as well. Did you happen to ask your daughter how she felt at the end of that day? Typically you will feel energized and happy from eating so healthy. I’d be curious to know if she noticed a difference in herself.

Very nice eggless crispy with the colorful fruits. My diet is pretty much a balance, with healthy and some sinful food in between. Great to hear that your daughter understands the need of being healthy with food. Over here, parents go through a hard time esp getting the kids to eat veges and fruits. Most of the kids here are hooked on fast food and they can go everyday with McDonalds, KFC and all those fast food.

This is just wonderful. I love that your daughter is learning about the “perimeter” of supermarkets – stay out of the aisles except for paper goods! The crepes would be a welcome treat in my neck of the woods.

I’ve never seen a crepe recipe without eggs! Brilliant recipe@ Whoever cannot eat eggs can still enjoy these beautiful crepes. Sometimes it’s really hard to eat natural 100%. You can, but it requires effort and discipline. It must have been a great experience for your daughter!
