As much as I like to try out new recipes, I always fall back on simple stirfry dishes for many of our family dinners. When time is short and it always seems like everything needs to get done right around the dinner time, i find it’s easy to stir fry up some chicken or tofu, throw in some vegetables, and add some seasoning or sauce to bring it all together. Today’s dish is something like that in which I added mango.
I not only enjoy mango as a fruit but also relish in sweet and savory dishes. The bold and sweet flavor of mango is simply irresistible in any form.
The recipe I am sharing is fairly simple and personal favorite of mine. It uses mango, chicken and asian condiments. I love how easy this is to make. Once you have cut up all chicken, mango and peppers, it’s just a case of browning the chicken and then adding the peppers, mango and all the sauces. Cook briefly to let the flavors all blend together. It’s sweet and tangy, and, depending on how much chili you use, it can have a little heat, too.
This recipe is great for weeknight dinner or packed lunches. I served it up over fried rice and with some lettuce salad.
Mango Chicken
Ingredients:
1 1/2 green bell peppers, cut into 1″ pieces
3 chicken breasts, cut into bite size
1/2 cup onion, cut into same size as pepper
1 large haden mango, cut into 1″ pieces
2 tsp finely chopped ginger
2 tbsp GF soy sauce
1 1/2 tsp rice vinegar
2 tsp fish sauce (Pf Chang’s)
salt to taste
1 tsp (+)red pepper flakes
3 tbsp olive oil
Method:
Heat 2 tbsp oil in a pan. stir fry diced chicken untilย it si cooked and get some brown marks. Turn off the flame. Remove chicken in a bowl.
Clean the pan with paper towel or use another pan. Add the remaining 1 tbsp oil in the pan and heat it on medium.
Saute sliced onion for a minute then add chopped ginger and bell peppers.
Stir fry for two minutes or until they are tender enough for your liking.
Add chicken pieces, mango, GF soy sauce, fish sauce, rice vinegar, salt and red pepper flakes.
Cook it for another minute and remove heat.
Serve immediately over a bed of rice or in a wrap.

I love this stir fry and wonder why I have never had the idea to include mangoes in my frequent stir-fries. It sounds so obvious when I look at your lovely photos! I preserve mangoes every year in a kind of simply chutney (with vinegar and chili) and use it all year round, very often with… chicken! In short, I’m sure I would love this dish.
