No Bake Cocoa Brownies

Just the mere word “Brownie” caught my daughter’s attention and she excitedly picked up a recipe from a specialty store where I shop for Gluten free products.

“Mom, You have to make these brownies. They are gluten free, egg free and no bake”, she said.

The recipe had some incredible ingredients so I thought to give it a try.

 

 

I had all the ingredients except for vanilla powder and coconut oil so I used vanilla extract and desi ghee instead. Desi ghee /clarified butter is often used by Indians in their cooking to deepen the flavor of sweets or even any savory dish. It tastes good just like that or can be had with chapati when sweetened with brown sugar or crumbled jaggery . Hemp seeds are another source of complete vegetable protein which I add them to my cereal and smoothies. Do not miss out on checking my breakfast hemp smoothie. Medjool dates, if you are not familiar they are the tastiest, moist and luscious dates in the world. They are extremely sweet and meaty with a tiny pit. The rich and satisfying taste of these dates perfectly suit the brownies by giving a caramel like sweetness, chewy texture and some extra dose of fiber. They are not too rich but give you a satisfied feeling.

Let me tell you one more thing, these brownies are super easy to make and have a better flavor of dark chocolate with nothing to feel guilty about. So, What are you waiting for ?

NO BAKE COCOA BROWNIES

Ingredients:

100 gm walnuts

25 gm almond meal or milk powder

50 gm cocoa

1/4 tsp pure vanilla extract

1 tbsp hemp seeds

1 tbsp desi ghee (clarified butter)

160 gm (12) medjool dates, pits removed

40 gm walnuts, chopped

Method:

Line a square pan (8″x8″) with aluminum foil with extra hanging off the sides so you can lift it out when the brownies are done.

Process walnuts in food processor until fine and crumbly.

Add the remaining ingredients except the dates and process for 30 seconds.

Now add the dates a couple at a time until mixture begins to look like a potting soil.

(The recipe says it sticks but my mixture does not look sticky at all.)

Scrape down the sides a few times to ensure that everything is mixing evenly. Remove blade from the jar and add chopped walnuts; stir with spatula. Transfer mixture to the prepared pan, distribute evenly and pat firmly into the pan with your clean hands. Place the brownies in fridge to set for 1 hour. Cut into squares and serve!

It’s good to store these brownies in fridge or in the coolest corner of your kitchen.

    These are some good-looking brownies you’ve got here, dear! I like that “I do not buy any food item just for the recipe unless it is marked important”. Hahaha! I think I need to learn from u so I won’t waste any food.

      If you look at my kitchen you will be surprised as to how many things I carry. I have a fridge which only carries my gluten free products so I can not buy anything just for the recipe. I post what I cook for my family.

    When I saw the No Bake, I was all trilled up. With the little baking skills I have, I am in need of easy to make desserts and this recipe is perfect. I too have many ingredients already at home because at times its difficult to buy small quantity. The cocoa powder and some are sitting in my pantry. Time to bring out to make this tempting brownies.

      Dates give binding and sweetness to these brownies. and not just any dates, Medjool dates. they have lot of fiber in sweetness in them.

    This does have some grand ingredients! Hemp seeds? Never saw that on a brownie recipe. Love that it’s no-bake (hello – hot summer) and like your replacements (my daughter won’t eat coconut anything). They look dark, rich and worth the calories!

    These sounds wonderful and I love that it’s a more healthy version than the traditional ones. Hey, I can use some no bake treats especially in the summer. It’s just make the house too hot to have the oven on. 😉
