The recipe I am sharing with you today is not like a Spanish or Mexican flan which is normally made with whole eggs and milk custard with a caramel coating. This is basically a plain cake soaked in orange syrup. Filled with whipped cream and fresh fruit and berries, nothing beats this stunner flan for the dessert table! Paleo Blueberry Muffin Cake
I love to cook and enjoy the challenge of cooking for people – who by choice or by necessity have limited diets; food allergies and intolerances. Today’s recipe is specially created for Emma (who is a Google+ friend) and many others who suffer from Myalgic Encephalopathy (ME) and Irritable bowel syndrome (IBS). When Gill Andrews (also a google+ friend) shared a post, ‘Who has a recipe for Emma?’, I started racking my brain for something (especially dessert) that could be delicious for anyone and appropriate for Emma’s diet. I came up with quick and effortless recipe, you’re absolutely going to love. I used my blueberry buttermilk pound cake recipe as inspiration and switched things up to make it paleo friendly. I have made this cake two times now, and the whole family (plus several friends) love it.
Adai (Ada dosa)
Dosas are absolutely the tastiest and attractive rice crepe around. There are so many varieties, that one can never get tired of eating them. Some varieties of dosas can be prepared instantly but some need a little time of soaking and fermenting such as masala dosa and utthapam, and then there are some that do not need fermenting. One such dosa is Adai dosa. It is basically a combination of rice with a range of colorful lentils all soaked together and ground to form a thick and coarse batter. Adai dosa is considered to be the nutritious among all dosas.
Methi Malai Choliya
Apparently, I am on a green garbanzo kick lately. First it was healthy chaat from these beans and now today’s recipe.
It is a unique combination of 3 ingredients: methi (fenugreek), malai (cream) and matar (peas). However the recipe below is made with frozen green garbanzo beans instead of peas. Sweet, succulent and packed with several vital nutrients both are easily interchangeable in many recipes. I love the complex flavors of this dish. The mild bitterness of fenugreek leaves is wonderfully balanced with sweet green garbanzo beans and smooth creamy gravy.

Weather is warming up in Vancouver, and I enjoy spending some time outside, tending and watering the plants everyday in my little garden. Pad thai needs no introduction! It is one of the the most widely recognized Thai dish in the entire world. It is a stir fry dish of flat rice noodles with some scrambled eggs, crunchy mung bean sprouts, roasted peanuts that are flavored with a tasty mixture of tamarind, fish sauce and palm sugar.
