Tomatoes can be roasted both on the grill and in the oven, and today I’ll tell you how I prepare them in oven.
I am a huge tomato lover. I love garden-fresh tomatoes. They are super high in nutrients, juicy, sweet and so tasty. They are low in calories and provide a healthy dose of lycopene, and are a great source of vitamin A, Vitamin C and potassium. As they ripen and change from green to red, their acidity level decreases and sweetness increases, as does the vitamin A and C content.

Roasting tomatoes in oven is part of my summer chore. If you are a gardener you know that how quickly they ripen in September. Even though I’m eating tomatoes for breakfast, lunch, and dinner, I still can’t get to all of them in time before they start to wrinkle and get soft. Next year I’m just going to grow only two plants.
Roasting tomatoes are not difficult to do and can be customized to be as herbaceous, garlicky, spicy, or as simple as I am sharing.
Let’s turn on the oven and roast Tomatoes together!
Ingredients
- Tomatoes ( can arrange 3 lbs on 1 tray)
- Olive oil
- Salt
- Black pepper
- Herbs - optional
- Other spices- Optional
Instructions
- Take a large baking sheet and line it with a piece of parchment paper or put wire rack on top. I prefer cooling rack.
- Wash the tomatoes and cut them in half lengthwise. Arrange on the cooling rack with the cut side facing up and being careful not to overlap them. Add water to the pan to avoid any smoking.
- Drizzle with a generous drizzle of extra virgin olive oil, salt and black pepper. (if you wish to use other spices and dry herbs sprinkle it over after half time).
- Bake at 450° F for about 1 hour (the cooking time of roasted tomatoes varies according to the ovens and the size of the tomatoes).
- Once roasted cool for 20 minutes. Then remove in a bowl. They keep well in the fridge for a couple of days and can be enjoyed at room temperature.
- They are excellent as an accompaniment to meat or fish-based main courses, but they can also be a condiment for curries, pasta, a sandwich, pizzas or savory pies.
