This is a simple yet tasty salad you can enjoy with an everyday meal. It is dressed with just vinegar and salt, which highlights the mild spiciness of red onions. Beet lends a beautiful color and deep earthy sweetness. Add some fresh mint if you want to dress it up a bit for the company so it pleases both taste and eyes. You may need a mouth freshener after eating this salad but it’s truly a gastronomic delight. It is one of my favorites, and I’m sure it’ll become one of yours. So try it!
Accompaniments/Condiments
Desi Ghee-Making your own Liquid Gold at Home
Pure Ghee is an integral part of South Asian Household. Being from a Punjabi family, every dish my mother cooked was tempered or garnished with ghee. Be it a tadka on dal or a spoonful on hot simmering khichdi or a dash of it on chapattis. It was delicious – on, or in, anything, any time! My mother never bought store bought desi ghee and have always prepared fresh at home, with the butter she churned out of milk cream or yogurt. I’ve adopted the same approach in my kitchen and make fresh desi ghee. Even though, I don’t use ghee liberally as my mother used in her cooking, I do prefer the home-made kind over any store bought brand.
Tropical Fruit Chutney
I adore different types of chutneys and sauces with my food to add some zesty flavor. Made with tropical fruits this chutney has the right balance of sweetness and spiciness! Its preparation is simple too; just chop fruits, add sugar, vinegar, spices, and cook slowly until the mixture thickens. I make it in small batches so that I don’t have to refrigerate or preserve by canning. It will keep for two weeks or more on the counter, if it lasts that long.
Naturally Sweetened Coconut Burfi & Homemade Chai Spice Mix (Diwali Gift Idea)
Sweets are a part of Diwali but we do not really need refined sugar to enjoy these sweets. I developed a coconut burfi recipe that is naturally sweetened and I am proud to share that today. Diwali is also the occasion when you show love and affection to your dear ones by gifting things that they’ll treasure. I also take pleasure in sharing recipe for “chai spice mix” that I make and give every year to my friends.
Honey Sweetened Golden Plum Chutney
While we love eating plums fresh, nothing beats an old fashioned plum crumble, or a pudding, jam or chutney to savor in the cold months. No one eats jam in this household as it is too sweet so chutney is my favorite way to save the harvest. We love a good chutney. It is basically the savory, sweet and sour version of jam and the EASIEST thing you can make at home. A chutney goes really well as a spread for crackers or as a side with rice dishes or parathas. It can also be used for a PBJ sandwiches and over cold meat or cheese.
No Sugar Mixed Berry Compote
A compote is a mixture of stewed fruit (whole or cut into pieces) in syrup. Originally eaten as a dessert, a compote makes a delicious start to the day either eaten alone or as the perfect pairing for porridge, pancakes, waffles or yogurt. It comes together in 15 minutes and can be made with any fruit. There are a lot of different ways to make fruit compote. Some recipes I’ve come across say to add cornstarch, lemon juice , spices and a lot of sugar. Since my family and many of you are trying to eat a bit leaner, healthier and cutting down on foods with added sugar, I keep my compote simple and completely refined sugar and artificial sweetener free.
Sweet Potato spread/hummus – dairy free & vegan
The sweet potato spread/hummus came about one evening when I needed to prepare an appetizer to accommodate unexpected guests. As the weather is beginning to change and the march break is quickly approaching, it seems like a great time to share this recipe! Kids and adults will both love this spread over crackers with various vegetable topping.
