Citrus fruits are a great source of mood-elevating vitamin C. Plus, chocolate is a definite cure for cold weather and gray skies. So, I thought to make this orange chocolate cake. To tell the truth I have made this cake a few times, and every time I did it a little different. For a warming twist, I decided to add in some ginger this time. It tasted amazing and exotic!

Caramelized Apples with Pistachio Yogurt Cream
Although I hate to see summer’s gone away, I enjoy the crisp mornings followed by the warm afternoon and cooler nights. It is the season, when apples and other late harvest fruits are ready to be mixed with warming spices then transformed into pretty desserts.
Since my daughter have really started to prefer healthier desserts to those laden with sugar and calories, so I am kinda trying to give healthy twist to traditional recipes. I caramelized apples for our Friday night dessert and served with pistachio yogurt cream. Not only did it taste delicious but baking the apples made the house smell lovely.
Flourless Chocolate cake and 5th Blogiversary!
It seems hard to believe that I’ve been blogging for five years now. July 18th marks the 5th blogiversary of my little blog. It is also my husband’s birthday. My blog was officially launched on the 12th but to not forget my blogiversary, I changed the publish date of my first post to his birthday. So to mark this double whammy of a celebration, I made this chocolate cake.
I still remember the day I published my first post as if it was just yesterday. Back then, I had no idea about the existence of this wonderful food bloggers world. Having grown up in the 70’s and gone to college in the 80’s…. My generation has not seen the world of emails, hangouts, social media and smart phones. So it amazes me that I am part of something that I had never originally imagined. Being a blogger is one of the best things that has ever happened to me.
Mango ‘Malai’ (mango fool) – a perfect treat for mango lovers
If there is one fruit that I can’t wait for to come in season, then it would be mango. Now that it is end of June and mangoes are at their peak in my neck of the woods, sharing a dessert with you made sense. Mango ‘malai’ was one of many typical summer desserts for me and my siblings while growing up. It was quick, easy and the taste? Oh so heavenly! I picked up a few manila mangoes and decided to make this treat for my family. That first spoon took me right back to my childhood.
No Sugar Mixed Berry Compote
A compote is a mixture of stewed fruit (whole or cut into pieces) in syrup. Originally eaten as a dessert, a compote makes a delicious start to the day either eaten alone or as the perfect pairing for porridge, pancakes, waffles or yogurt. It comes together in 15 minutes and can be made with any fruit. There are a lot of different ways to make fruit compote. Some recipes I’ve come across say to add cornstarch, lemon juice , spices and a lot of sugar. Since my family and many of you are trying to eat a bit leaner, healthier and cutting down on foods with added sugar, I keep my compote simple and completely refined sugar and artificial sweetener free.
Lemony Lemon Cake
I think it’s important for everyone to have a great, reliable, and a killer cake recipe that they can pull out when the need arises. There are always get-togethers, potlucks, and pool parties when you just want to bake a homemade cake that is both pleasing to the eye and to the palate. This one is mine and dare I say, it could be yours too. Bursting with bright lemon flavor, this cake’s got a great softer crumb and tender moist texture. I added lemon juice and zest to the batter, which lightly infuse the cake with fresh lemon. Then, it is doused with a lemon syrup to further enhance the lemon flavor. Finally, the cake is decorated with lemon curd which adds an explosion of lemon flavor to every bite.

This mango cheesecake with blueberries is a delicious dessert to enjoy with company or family. No eggs, no baking, no gelatin but still delightful.
