Persian Chickpea Flour Cookies (Nan-e Nokhodchi)
Sweets made with besan have always been my favorite. So when I encountered this cookie a few years ago, during spring at a specialty store featuring chickpea flour, I was thrilled. I was even more excited by seeing the ingredients, they were similar to what we use in making Besan ladoo and Besan burfi. The recipe was so much easier. Since then, I have been making these cookies every Baisakhi. These chickpea flour cookies with pistachios are melt in mouth Persian treat, traditionally known as Nan-e Nokhodchi.
It would be a pity to deprive yourself of these petite cookies because they are very simple to prepare and delicious. Perfect for kids, (or an adult’s) party or to celebrate a festive and joyful occasion .
Sicilian Cookies with egg free and sugar free option
On my recent trip to Italy I had a chance to eat a bunch of gluten free cookies. I particularly fell in love with the Sicilian cookies. They were crisp on the outside and dense and chewy on the inside. So of course, I had to come home and try to recreate it. I searched online and developed my recipe based on this and this. These cookies are naturally gluten-free, dairy-free and so delicious. I also experimented with egg and sugar free cookies, just in case someone with different dietary restrictions needed to try them. The result was soft with a texture of cake.

I had these cookies for the first time a couple years ago in a Christmas cookie exchange and I have to say I immediately fell in love! It’s been a long time since I posted a cookie recipe on my blog. Well, that’s because I rarely make cookies for myself. This doesn’t mean that I don’t bake cookies at all, my daughter’s cookie jar never goes empty. She has to have some kind of chocolate cookie to snack on and she can even eat cookies for breakfast. Over the weekend I was baking cookies to put in the Christmas goodie bags for my friends and staff. I thought it wouldn’t be wrong if I add some gluten free cookies in it. These delightfully simple cookies are filled with tons of texture from coconut flakes and oats, and subtly flavored with lime zest.
Linzer Cookies
I love giving and getting homemade food for gifts. And this love made me participate in an online cookie swap arranged by Foodies+. The partners were randomly paired based on country or location wished by participants. There were only two entries from Canada so I was paired with Sally Weatherly of Vancouver. Since we lived on a 40-50 min drive from each other I dared to to ask Sally if she was interested in meeting in person. She thought it was an excellent suggestion and then we started materializing our plan by exchanging emails, choosing the day, time and location for the cookie exchange. It was a thrilling experience meeting someone face to face from a different background who I solely met through foodies community.
