I’m all about making real meals simple and convenient enough for weekdays. The easier it is, the more likely you are to cook it and eat it. This delicious recipe is a great way to use up a lot of odds and ends from the fridge or vegetable basket. It makes a great option for packed lunch as it tastes equally good warm, cold, or at room temperature. I usually serve this garden vegetable soba noodles with a piece of oven baked fish or chicken for a more substantial meal.

We eat a lot of beans but I’ve often resisted making “bean burgers”. It’s not that I don’t like them, It’s just that, most bean burgers have the texture of mush which I do not find appealing at all. A while ago I tried the bean burger recipe from the Food lab of Serious Eats. It was a win at first try! The tips given in the post gave a perfect burger that was not mushy at all. My family loved it and after that I tried it with different combination and spices. These burgers have a firm crust on the outside and still moist on the inside. They don’t fall apart when cooked and don’t squish out the back of the bun when you bite down. What more do you want? With the right ingredients, a little time, and the technique of dehydrating the cooked black beans, I perfected my recipe for vegan black bean burgers.
Persian Chickpea Flour Cookies (Nan-e Nokhodchi)
Sweets made with besan have always been my favorite. So when I encountered this cookie a few years ago, during spring at a specialty store featuring chickpea flour, I was thrilled. I was even more excited by seeing the ingredients, they were similar to what we use in making Besan ladoo and Besan burfi. The recipe was so much easier. Since then, I have been making these cookies every Baisakhi. These chickpea flour cookies with pistachios are melt in mouth Persian treat, traditionally known as Nan-e Nokhodchi.
It would be a pity to deprive yourself of these petite cookies because they are very simple to prepare and delicious. Perfect for kids, (or an adult’s) party or to celebrate a festive and joyful occasion .
Sicilian Cookies with egg free and sugar free option
On my recent trip to Italy I had a chance to eat a bunch of gluten free cookies. I particularly fell in love with the Sicilian cookies. They were crisp on the outside and dense and chewy on the inside. So of course, I had to come home and try to recreate it. I searched online and developed my recipe based on this and this. These cookies are naturally gluten-free, dairy-free and so delicious. I also experimented with egg and sugar free cookies, just in case someone with different dietary restrictions needed to try them. The result was soft with a texture of cake.
