I made these chicken kebabs last weekend. We were entertaining a small group of friends and kebabs seemed like the perfect main course with roasted potatoes. The best part was that I used the same vinaigrette, so less work!
Main Course
Daal Saag / Lentil Stew with Garbanzo Leaves
Gosh! It seems too early to be really posting a winter dish but my garbanzo/ chickpea plants are getting dry and woody and I wanted to use the tender leaves before I uproot them. Every spring I make a small kitchen garden with selective plants. Since most of them do not survive after the frost its a new effort every year. There is not a lot of space for my kitchen garden but I choose vegetables that taste better when fresh and quick to grow. I plant tomatoes, few herbs, salad leaves, chillies, couple of veggies, and then I also make an effort to try one or two new plant every year. This year I experimented with chickpeas. I sowed few black chickpeas in early April and got beautiful plants. Unripe chickpeas or green garbanzo are often picked out of the pod and eaten raw as a snack or can be enjoyed in so many different ways. The tender leaves are used raw in salads, cooked in soup or a lentil stew that we call it, daal saag.
Pad Thai
Weather is warming up in Vancouver, and I enjoy spending some time outside, tending and watering the plants everyday in my little garden. It gives me immense pleasure and helps in keeping myself active and busy. Last week the weather was gorgeous and my daughter invited her old school friends over for lunch. I wanted to serve something simple, speedy and satisfying, which the girls would like. Then, pad thai came to my mind that everyone knows and loves!
Pad thai needs no introduction! It is one of the the most widely recognized Thai dish in the entire world. It is a stir fry dish of flat rice noodles with some scrambled eggs, crunchy mung bean sprouts, roasted peanuts that are flavored with a tasty mixture of tamarind, fish sauce and palm sugar.
Daal Makhani in Slow Cooker
Slow cooked creamy daal makhani with whole urad and red kidney beans. Lentils are an everyday thing in Punjabi homes but by no means is this daal an ordinary affair. However it is extraordinarily simple to cook.
Chicken, Beans & Quinoa Casserole
I am not a person who makes casserole on a regular basis, but I do so when I want a change of pace in winter months.
It started at the weekend when I had a good friend over the lunch and then, as I had prepared too much quinoa and had leftover chicken, I made this chicken quinoa casserole with mexican flavors.
Chettinad Chicken Masala
Chettinad chicken is a popular dish from Chettinad region of southern Tamilnadu state in India. It is famous for its spicy, bold and aromatic cuisine. My recipe for Chettinad chicken is spicy but will not burn your mouth.
Besan Ki Sabzi
Besan is one of the versatile flour I know of. Its been a staple in my kitchen and I relish it in one form or another. It can be mixed into the flours for flat bread and pizza crust, used like eggs to make cheelas, as a binder for koftas, batter for deep frying, thickener for curries, base for exotic sweets, crunchy drops for flavored yogurt and many more.
