Persian Ground Lamb Kabab – Kabab Koobideh
Beautifully grilled, moist and juicy strips of ground lamb with middle eastern flavors! You can either grill them on skewers or shape them into patties and cook on a stovetop. These mildly spiced kababs are often served with a mound of Persian rice, grilled tomatoes and yogurt dip for an appetizing meal.
SriLankan Style Fish Curry
I gave a well-deserved rest to lentils and vegetables for one day and cooked fish on father’s day. My daughter has planned to go for hike with her dad and me but rain messed up all her plans. So, we chilled out at home instead. For lunch I made Sri lankan style fish curry. I don’t make fish curries all that often because I am not good at that. However, when I think of special meals for my husband I often think around fish or lamb because these are his choicest foods. I could have baked the fish which I love to do but sometimes I get in the mood for something different and lately I’ve been wanting to make fish curry for quite some time. This turned out a fantastic dish, spicy and delicious.
Kashmiri Rogan Josh
Rogan josh is the recipe that I can say is an absolute hit every single time with family and friends. It is a braised lamb or goat dish believed to have originated in Persia before making its way to Kashmir and then other parts of India and beyond. Deriving its name from Persian word “Rogan” which means clarified butter or oil, while “josh” refers to hot or passionate. Rogan josh thus means meat cooked in oil with an intense heat. This classic favorite is commonly served in the Kashmiri feast called “Wazwan”. Comprising of almost 36 courses, more than half of the Wazwan dishes are meat-based, such as tabak maaz, rogan josh, rista, and gushtaba, along with an assortment of kebabs and vegetable preparations.

Salmon is one of my favorite types of fish. Even though it is comparatively expensive to other fish I choose to cook with it more often because it tastes great when baked or grilled with select herb and spices. There are plenty of marinades you can use with salmon and it responds really well. The following recipe uses yogurt, oil, lemon chili powder and carom seeds. It is very convenient for a weeknight meal and also pretty enough to serve to guests for lunch or dinner with stir fried vegetables, and some bread or rice.
Shami Kebab
Shami kebabs are the very popular variety of kebabs in Indian cuisine and also in other South Asian countries. These kebabs involve slow cooking the boneless meat with lentils then blended to form a smooth dough. The mixture is then shaped into discs and shallow fried until crispy on the outside and soft on inside. They are highly addictive and a perfect snack when entertaining guests or have for dinner with salad. They are also perfect in the lunchbox and are very filling and healthy.
My Mom’s Boiled Egg Curry
Egg curries are very popular in India and are prepared in many styles. This is my mother’s recipe made with boiled eggs, onion, besan and tomato. Growing up this egg curry was a cherished weekend treat in our family.
