Kedgeree is a lovely dish that has a history dating back to the colonial era. It is believed to be based on the popular Indian dish called “Khichri”, which is a fragrant potpourri of lentils, rice and spices. The re-adapted and reinterpreted dish Kedgeree consists of rice, boiled eggs and fish, generally smoked haddock but other fish can be used. My version of Kedgeree with no sugar mango chutney is an easy and delicious way to use up leftover salmon creating a hearty meal the whole family will enjoy.

Easy Goan Fish Curry
Goa with its vast coastline is known for its plethora of seafood preparation which has influenced the food habits of the region. Fresh fish is aplenty so it is cooked frequently in every Goan home and enjoyed with rice, fried fish, and a vegetable. We had our first taste of this curry during our visit to Goa. It was sitting in the back of mind since then, so I knew I had to make it.
Goan fish curry is great for weekday meal as it doesn’t take a lot of prep or cook time and yet, it turns out as one of those special meals.

Salmon is one of my favorite types of fish. Even though it is comparatively expensive to other fish I choose to cook with it more often because it tastes great when baked or grilled with select herb and spices. There are plenty of marinades you can use with salmon and it responds really well. The following recipe uses yogurt, oil, lemon chili powder and carom seeds. It is very convenient for a weeknight meal and also pretty enough to serve to guests for lunch or dinner with stir fried vegetables, and some bread or rice.

Rodrigo Style Fish with Braised Carrots and Citrus Cilantro Sauce
Pescado rodrigo, a classic Mexican recipe made with tilapia. The fish is seared until crispy, then flaked and served with a citrus cilantro sauce on a corn tortilla. However, I served over a fluffy bed of quinoa along with braised carrots.
Steamed Fish in Mustard Sauce (Bengali Style)
Today, I’m bringing a simple but interesting preparation of Bengali steamed fish (Bhapa Ilish) to go along with plain boiled rice. The bengali diet includes a lot of fish and the use of mustard oil, seeds and paste. I am not a bengali to claim that fish is staple at our home or I liberally use mustard but I do try to eat fish once or twice a week , cooked in different ways. I made this dish for a group of friends who are bold enough to try something new at my home. There are two ways of preparing bengali style steamed fish, in a steamer or in oven. I like the oven method better because it is cooked and served in the same dish, reducing the amount of time needed for cleaning afterwards.
Sour and Spicy Fish Curry ( Asam Pedas)
Every culture has their own version of making herb and spice pastes that lend a unique and distinctive flavor to the dish. Malaysians use a basic spice paste recipe in many of their curries and stir fries, which they call Rempah. My recipe of sour and spicy fish curry is inspired from two of Nava’s recipes, using rempah paste.
