I have many memories of my mother’s food and the taste I grew up with. Missi roti was one of my favorite flat breads since childhood. My mother usually served Missi roti hot from the tawa with a generous dose of butter on top along with homemade yogurt and aamras. It was a lip smacking treat in summers. The trend seeped into my own family and I find myself making it the same way.

Missi refers to the ‘mixing of two or more flours together’ to make a dough. You will find different variations of the Missi roti recipe. While a classic Punjabi-style Missi roti is prepared with choleyan da atta aka black chickpea flour (Bengal gram flour) and whole wheat flour. It can be spiced up with various herbs and spices,but most commonly onion, green chili,ginger and cilantro are used. The earthy aroma that hits your nostrils while making these rotis is so appetizing.
Black chickpea flour is highly nutritious & provides us with lots of health benefits. It lowers blood cholesterol levels & is considered suitable for people suffering from diabetes. You can make black chickpea flour at home in just minutes or buy the certified gluten-free black chickpea flour (whole Bengal flour) from the store. I’ve been making black chickpea flour and other flour for years. All you need is a high-powered blender or grinder. Some grains and beans can also be ground in a coffee grinder, but not this one.
The proportion of black chickpea flour and whole wheat flour varies from person to person. I never measured but the rule of thumb is to use approx. 2:1 ratio of Gluten free white chapati flour and black chickpea flour to make a soft dough. Missi roti is flattened with hands which give the roti an uneven shape. It adds to its rustic look. The gluten-free Missi roti won’t be as soft as the one made with whole-wheat flour, but the taste will be great.
Missi rotis have to be served hot as on cooling they become slightly dry so slathering them with ghee or butter makes them soft and easy to chew. Watch my video to see how it’s usually eaten.

Ingredients
- 1/3 cup gluten free white chapati flour
- 2/3 cup whole Bengal gram flour (home made or store bought)
- 2 green chili, finely chopped
- 1/8 tsp garam masala (optional)
- 1/4 tsp Ajwain (carom seeds)
- 1 -2 tbsp red onion, finely chopped
- 1 tbsp cilantro, chopped
- salt to taste
- 1 tsp finely chopped ginger
- Water to knead dough
Instructions
- Combine both the flours in a bowl. Add chopped onion, green chilli, salt cilantro, ginger, Ajwain and garam masala.
- Make a soft dough by adding water.
- Heat a tawa or shallow nonstick pan to medium hot.
- Divide the dough into 2-3 balls. Take one ball and pat it with your hand over a cling wrap. Apply water to your hand for spreading nicely.
- Gently place the roti on the tawa with wet hand. Check with a spatula if the roti is showing some light marks on the cooked side. Turn it over.
- Heat wire grill on other gas burner. Then transfer the roti to the rack and let it cook.
- Use tongs to turn over chapatti back and forth. It will not puff like a wheat flour chapatti. Once both sides are cooked showing brown spots remove from tawa. Cook the other chapatis in the same way.
- Serve hot from the stove with butter on top, along with yogurt and aamras.
- Wash dry black chickpeas.
- Spread them on Kitchen towel in single layer. Let them dry. (it will just take an hour).
- Grind in a high powered blender or grinder. Using a fine mesh sieve, sift the flour into a bowl, and any larger pieces that did not fit through the sieve, return to the blender and process again to break them down further. Discard any remaining pieces of chickpeas that did not process.
- Transfer the flour to a container with air tight lid.
