Today is my birthday. As I was about to get up from bed, my husband told me to sleep in and relax, and he will manage the breakfast. I am a habitual early riser. It is the quietest time of the day and I love to do most of my housework in the morning.
I came back to my bedroom, didn’t know what to do. I can’t just lie down and stare at the ceiling. It was a beautiful day. Bright sun was peeping through the blinds. My daughter wished me Happy Birthday and left our dog truffles with me for company. I started cleaning our bedroom. At 7:00, my daughter called and I went downstairs. I was elated to see breakfast on the table. In relationship small things matter the most. My husband had made stuffed omelet with pan toasted gluten free bread. I quickly clicked the picture before eating.
Love is what we do and what we don’t!
Its not that my husband doesn’t cook, he does cook on some Fridays and whenever he is in the mood to cook something non vegetarian. He has a busy schedule and we eat breakfast around 7:30 AM because I have to drop off my daughter to school and by the time I come back my husband has also gone for work. I work with him so I go late or when ever I want to. Mine is a flexible schedule. So cooking breakfast on his working day was really something special. My daughter also said she was going to make cup cakes when she comes back from school. I told her it was not necessary but she said she wanted to make gluten free cup cakes instead of ordering a cake.
Its so fortunate to have a daughter like her, who in spite of being busy with her summer school and sports wanted to do something for me.

This is the gluten free vanilla cup cake my daughter made for me. She doesn’t know icing but she looked in the wilton book to do this shaggy mum flower on it. Isn’t it beautiful? I am totally impressed!

Last night we went out for dinner at ANDUCCI’S . Its an Italian restaurant on East hasting in Burnaby. The location is quite out of the way for us, my husband has checked with them for Gluten free options. They said they could basically make any pasta dish gluten free.
The restaurant was pretty busy at 8PM. They served toasted house bread (looked like cake to me) in olive oil and balsamic vinegar. I wanted to eat it but it was not gluten free. I asked the waitress if they also have gluten free bread, they didn’t. I thought to order tomato and boccicini salad or tomato basil soup for appetizer but I was kind of full with the 2 cup cakes I ate before coming to the restaurant. My husband and daughter were enjoying the bread. They said if the food does not come in 15 minutes they are going to finish the whole bread.
I ordered the “HULK”, a vegetarian pasta with roasted tomatoes, mushroom and spinach with white wine and olive oil sauce. I chose this because I wanted something different, not the usual pasta with tomato based sauce and lot of cheese. The pasta (fiorentini linguini) was well done with mild flavor. I liked the crunch in the dish which came from roasted pumpkin seeds. This dish was finished with goat cheese.
I feel so incredibly blessed to have family who LOVE me enough to go out of their way to do such sweet things for me!
