Peanuts adds a great crunchy texture to the dish besides giving added benefits of healthy fats and protein.
MOONGPHALI ALOO KI SABZI/ PEANUT POTATO STIR FRY
Ingredients:
5 medium size potatoes
1 onion
1/3 cup peanuts
1/2″ ginger
1/2 tsp rai (mustard seeds)
2 dry red pepper (broken into halves)
1/2 tsp turmeric
1/2 tsp red chilly powder
2 tbsp olive oil
salt as per taste
5-10 curry leaves
1/2 tbsp chopped cilantro
Method:
Boil or microwave the potatoes until tender.
Leave aside for 10 minutes to cool or run them under cold water for quick cooling.
Slice onion and finely chop ginger. Peel the potatoes when they are cooled. Then dice them.
Heat oil in a pan over medium heat. Add rai, dried red chilli and curry leaves followed by peanuts. Stir to prevent burning.
After about 30 seconds add sliced onion. Cook until peanuts are roasted and onion gets light pink color.
Add turmeric, chilli powder and minced ginger. Saute for 30 seconds and then finally add diced potatoes. Season with salt.
Stir until well combined and heated through. The whole preparation and cooking time will take less than 30 minutes.
Transfer the potato sabji to a serving bowl and garnish with cilantro.

Not sure why our cuisine only seems to use nuts in sweet dishes. Cuisines of other countries seem to make more use of them. The savory dishes I have tried with nuts or peanut butter have been delicious. Your use of the peanuts with the potatoes sounds like a great blend. Thanks for posting this tasty side dish.

Omg the potatoes look really good. You ever try cooking with coconut oil instead of olive oil? I find it makes the food taste better and it’s a lot healthier for you to.
