No matter whether you are Christian or not, Christmas is celebrated by people around the world. I am a Sikh, we do not celebrate Christmas as the Christians do but we use this as an excuse to meet up with family and friends for dinner. My daughter puts up the Christmas tree and decorate it with great joy. I bake cookies to share with staff and invite them for dessert and drinks. This year I have decided I’m going to make chocolate mousse.
Chocolate Mousse is an easy and delicious sweet treat year round and with chocolate candy cane bark it is perfect for the holidays. While I was planning this dessert in my thoughts, later that evening I had this light bulb moment when I saw the candy cane bark that my daughter made it in the school. She has food and nutrition as one of her electives and bring home the goodies that she bakes or makes. Upon having the very first bite of the candy cane bark I had this overwhelming feeling to change my previously planned layered chocolate mousse recipe and add candy cane bark to it.
Therefore , I made this easy chocolate mousse from the dessert tofu I had it in the fridge. This eggless chocolate mousse is super simple to make and uses only a few simple ingredients. Because it is not made with raw eggs and cream it can be enjoyed by everyone and makes a great light dessert for a party. My daughter helped me make the chocolate candy cane bark which made the chocolate mousse more elegant and flavorful.
EGGLESS CHOCOLATE MOUSSE WITH CANDY CANE BARK
Ingredients for candy cane bark:
1 cup semi sweet or dark chocolate, chopped
1 cup white chocolate, chopped
2-3 candy canes crushed (any flavor)
Ingredients for mousse:
1 pack ( 2×150 gm) tofu dessert (original)
few pieces of crushed candy cane
1/2 cup chopped dark chocolate
1/2 cup chopped semisweet chocolate
Method to make mousse:
Put tofu in a blender and puree until smooth.
Melt chocolate in a bowl set over a pan of hot water. Stir often until it is well melted and smooth (Make sure it is not overheated. Chocolate is very delicate and can become lumpy or grainy if overheated).
Let the chocolate cool for 2 minutes. Add the cooled chocolate to the blended tofu mixture. Blend until just mixed.
Keep the container in fridge for 3 hours until thickened and chilled.
Method to make candy cane bark:
Line a baking sheet with waxed paper. Make sure the chocolate is chopped in uniform pieces for even melting.
Place white and semi sweet chocolate in separate cups or bowls. Melt using the above method.
If you wish you can also melt the chocolate in the microwave. Pour semi sweet chocolate onto waxed paper forming 3 to 4 strips depending on how much chocolate you are using, leaving 1″ space between each.
You can easily make with 2 cups of chocolate in a 9×15″ baking tray.
Melt white chocolate in the same way and pour into spaces so they touch with semi sweet chocolate. Give a marbled effect with a sharp knife tip or tooth pick.
Sprinkle with candy canes and refrigerate until hardened. Break into pieces and store in an air tight container.
When the mousse looks set serve it chilled in two cups with some crushed candy cane and the candy cane bark.
