As previously mentioned about posting healthy and budget friendly appetizers this is my second one in the row. Today, I chose to do an appetizer with peanuts, which belongs to a legume family. Legumes are edible seeds enclosed in pods and pack a pretty powerful punch. On an average a single serving provides at least 20% of our daily need for fiber and minerals. They are budget friendly and can be stored well for longer periods of time.
Peanuts are incredibly affordable and the cheapest nut. They sport the “nut” name, because they have a nutty taste and high protein profile like nuts. Hence, they are processed into butter, oil and flour. Peanuts are used extensively in Indian cooking. These seasoned peanuts are my family’s favorite snack. They are perfect for parties, tea time get together or nibbling while watching a game.
They can be prepared anytime with pantry ingredients. Although the recipe I have given has exact measurements but feel free to make adjustments. You can roast the peanuts ahead of time and store in an airtight container after skinning.
SEASONED COCKTAIL PEANUTS (no oil)
Ingredients:
1 1/4 cup raw peanuts with skin
1 1/2 tbsp red onion, chopped
2-3 green chilies, finely chopped
1 tbsp lemon juice
1 tbsp cilantro, chopped
salt to taste
Method:
Dry roast the peanuts in a pan.
Let it cool for 5 minutes. Meanwhile lay some old newspapers on the sink. Transfer the peanuts in a plastic colander over the newspapers. Rub the peanuts with your fingers and shake the colander.
Some of the skin will fall through the holes and which is left can be gently blown by tilting the colander side to side or with hair dryer.
Put the peanuts in a plate or bowl. Add chopped onion, green chilies and cilantro.
Season with salt and lemon juice.
Gently mix it and serve with drinks.
Note: You can use pre roasted peanuts but it just misses the pleasant pea-nutty aroma.

Seasoned cocktail peanuts sound fantastic. My mother cooks and seasons her peanuts and eats them in rice dishes and they are so good. The flavors sound really good.
