Today, I am sharing a breakfast recipe which I made during these disaster days. It does not look pretty, I know but not bad enough to eat, when you have to rely only on microwave for cooking.
Mornings are hectic for many people. Though, I do not officially work for anybody but working for my husband keeps me on toes. My day starts at 6: AM. After finishing with the breakfast I usually have 15-20 minutes to check blogs before stepping out of the house. After that how my day goes by I don’t know. But in a way its good; being busy really helps my day to go faster. So eating a filling, healthy breakfast provides fuel and energy to tackle the busy day ahead.
There are many breakfast options that are quick other than cereal, bread, eggs and smoothies. Quick semolina idlis are common in Indian homes since there is no soaking, grinding or fermenting involved. I can not eat semolina as it is made from wheat. So I use the instant idli mix to fix breakfast for my family without using the big steaming idli mould. These idli squares can be eaten with ketchup or any chutney but I always have to make coconut chutney for my daughter or else she won’t eat it.
MICROWAVE RICE IDLI SQUARES
Ingredients:
1 pack Gits rice Idli mix
1/4 cup chopped broccoli
1/4 cup chopped or grated carrot
1/2 tsp minced ginger
1/2 green chili
1tbsp cilantro
extra 1/2 cup hot water
no salt
To serve
coconut chutney or ketchup or tomato chutney
Method:
Grease a 8 or 9″ square microwave safe dish. In a bowl mix the idli batter as per directions on the pack. Add chopped vegetables except cilantro.
Pour the batter in the prepared pan. Microwave it for 2 minutes. Remove, add 1/2 cup hot water on top and sprinkle chopped cilantro. The idli batter will absorb all the water. Microwave for 2 minutes. After 4 minutes it will look like this.
Microwave again for 3 minutes. If it seems wet in the center, cook for another 1 minute. (If it still look wet, cut the idli into squares Remove on plate and cook just the middle part for another 1 minute.
Serve with coconut and tomato chutney.
Coconut chutney
Ingredients:
1/3 cup unsweetened shredded coconut (I dry grind the coconut before making chutney)
1/4 cup buttermilk or add two tbsp water to yogurt
1/2 green chilli
1 tbsp chopped cilantro
salt as per taste
Method:
Grind everything together in a blender.
Adjust the consistency by adding a tsp of water.You can also reduce cilantro if you want it less green.

This is perfect to just microwave the idli’s . I had no idea. We love idlis but I always shy away from making them because they make such a mess. Greasing the idli pan and then steaming it. Too many utensils to wash. This is the perfect idea. Thanks so much. Shall be microwaving them from here on.

Tina, this is a very popular product. In Canada you can find in any big grocery stores in the East Indian Isle. If you have any Indian store nearby ,try there.

Is the Gits rice idli mix gluten free? I am scared to use any of the off-the-shelf mixes because of cross contamination. Hence the whole idea of making idli from scratch is a major put off 🙁
If you could mention which of the readymade mixes/masalas have worked for you, that would be great.

Sam, Gits Idli and Dosa(rice) mix are gluten free. If you make from scratch lentil and rice are the only main ingredients that are used.
I try to make my own masalas but if you want to buy use the company M D H. Its been there from long time and is trusted. Biryani masala has msg in it. So if you are celiac, avoid that.
