An easy, delicious and impressive dessert with a rich pudding like center and deep flavor of port wine. Despite their fancy feel these molten chocolate cakes are quite easy to prepare.

Weight was never an issue for me. I am tall and average built woman with some fat around my midsection. I eat healthy, keep myself fit with physical activities like yoga, zumba and long walks. But, my husband who is a sports addict feels that there is no good workout than a real sport. Hence, he always persuaded me to play some game and I ignored it every time but for once I thought to resume playing badminton.ย This was the only sport I was good at in my school and college days.
I invited three of my friends (who have also not played from years) for a game of badminton in our nearby community center. It has a big gym with 4 courts. When we went in, there already were 16 people smashing birdies like professionals. We had to wait to play in the next round. People I spoke there were playing three time a week from last 10 -20 years. When they asked me, I was not at all ashamed of saying that I had picked up the racquet after 20 years. It was a pretty challenging to start. Our first 15 minutes of play was just catching on the groove. Our eye coordination was too bad and we missed the birdie numerous times. After 4 games I was dead tired.
When I came homeย my right arm was aching badly and felt swollen. I could not lift a glass of water. Don’t laugh.. I am not joking!!! I had to take strong pain killers to curb my aches, rest of my body was fine just a bit tired.
My husband encouraged me to continue our game with all that pains. And it was worth saying it. What I love most about my husband is his never ending support. He helped me with chores around the house so that my aching arm should get rest and I should not stop playing. His unwavering support means the world to me.
I continued playing twice a week and today I am celebrating one month of Badminton anniversary with my friends with this decadent molten chocolate cake. A recipe I pulled out of fine cooking magazine, it has a rich pudding like center and deep flavor of port wine.
MOLTEN CHOCOLATE CAKE WITH RASPBERRIES

Ingredients:
1/3 cup butter at room temperature, cut into 4-5 pieces
4.75 oz GF dark chocolate (65% – 80 % cacao)
1/3 cup granulated sugar
2 large eggs at room temperature
2 tbsp tawny port (you can use orange juice instead)
1/4 tsp pure vanilla extract
a pinch of salt
1 tbsp (or less) GF all-purpose flour
confectioner’s sugar for dusting
Raspberries for garnish
Method:
Preheat the oven to 425 degrees F. Generously butter 4 -oz ramekins. Put the ramekins in a baking pan with sides that are at least 2″ high.
Bring a kettle of water to the boil and keep at a simmer until needed. Heat the chocolate and butter in microwave safe bowl, or on top a saucepan with boiling water over low heat. Stir with wire whisk until chocolate is completely melted.
Whisk in the sugar and salt until dissolved about 30 seconds. Whisk in the eggs until smooth about 1minute. Whisk in the port and vanilla until combined, 15 to 20 seconds.
Sprinkle the flour over the top and whisk until incorporated, about 30 seconds. Pour batter evenly among the ramekins, filling each about two thirds full.
Carefully pour the boiling water in the pan so that it reaches at least halfway up the sides of the ramekins. Bake until the tops are just set and dry,14 to 16 minutes.
Remove the cakes from the oven and water bath, and let cool for 2 minutes. Dust with confectioner’s sugar, top with a few raspberries and serve warm.
