Even though spring is officially here we do not see it in the midst of rain and snow flurries. There are occasional sunny days with frost in the mornings and it is still quite cold in Lower mainland area. March is very unpredictable. If its sunny and breezy one day, it would be rainy and gloomy the next.
Nevertheless, nature does has her own beautiful ways to show spring is just around the corner.

I do not find a better way to welcome spring other than a dusky pink grapefruit spritzer! Made without alcohol. Happy Spring!

I am always looking for simple and easy non alcoholic drinks to serve at a dinner party or summer barbecue. When I saw this citrusy juice recipe at 101 cookbooks I remembered the concoction back home, which we would make it with lemon, ginger and honey for menstrual cramps, cold and stomach problems. It was a natural remedy in all seasons. During summer my mother would store sweet ginger syrup in the fridge to use in lemonade and a summer mango drink. So, I picked the idea from 101 cookbooks recipe and my mother’s sweet ginger syrup to make this delicious grapefruit drink.
Grapefruits are fantastic source of Vitamin C available all year round and pink varieties are packed with Vitamin A. The natural tartness of grapefruit juice and zing from ginger gives this spritzer a refreshing taste. I decided to add soda thinking of kids who love fizzy drinks and in this they are getting fresh juice with a taste of soft pop. This can easily be made a cocktail by adding your favorite spirit.
GINGER GRAPEFRUIT SPRITZER
adapted from 101 cookbooks
Ingredients:
- 300 ml fresh (pink or ruby red) grapefruit juice
- 3-4 tbsp sweet ginger syrup (I used 2 tbsp per glass)
- 1 can club soda
- ice cubes
- mint leaves for garnish
Method to make sweet ginger syrup:
In a small saucepan, combine 1/4 cup grated ginger, 1/3 cup water and 1/4 cup sugar.
Heat it over medium; allow to come to a gentle boil, stirring until sugar dissolves, simmer on low for 2-3 minutes.
Let it cool. Strain sweet ginger syrup and discard the ginger.
Chill in fridge or place in freezer for few minutes to cool.
Method to make Grapefruit Spritzer:
1. Pour ginger syrup and grapefruit juice equally in two glasses.
2. Top it with club soda.
3. Serve chilled with ice and mint leaves.
Store the remaining sweet ginger syrup in the fridge It can stay good for 15 days or more.

I do have a big bag of grapefruits that I am getty ready to use, but I am sure I will have some left over. This looks like a refreshing way to make use of them. Tasty blend here with the ginger. Spring is here already in Texas, I hope your area warms up soon.

What a great idea to use grapefruit juice with the ginger syrup! I have, actually I keep a bottle of ginger syrup in the fridge all year round. I usually just add mineral water (and sometimes Jamaican rum 🙂 ). Now I need to pick up some grapefruit juice because this looks sooooo good!
