Crispy on the outside, soft inside, these spinach and egg croquettes are simple to make and makes a great party finger food or appetizer!
My daughter eats certain foods in a certain ways. I never force her to eat what she does not like however I try to encourage and devise different ways to make her eat just once. She can eat raw spinach and egg salad sandwich happily but will turn her nose up if I serve the same thing in a curry or stir fry. She cannot even stand the look of cooked spinach and boiled eggs, let alone eating it.
But, who knew that my highly selective eating daughter would eat and love these tender crispy croquettes?
I usually make pan fried patties for ourselves with spinach and paneer. This time I thought to change some things around and deep fry them. Like most other teenagers she eats and watches TV after school. When I am not home I leave something on the kitchen counter for her to eat. Fried snacks are not an everyday thing at our house. Hence, I knew if she sees something fried with her favorite dip she will probably eat it without asking question. Don’t get me wrong here. I definitely love fried food but I eat and make less often.
Much to my surprise, my daughter finished her share of croquettes.
I asked if she liked it?
“Yeah, it was good”, she answered while her eyes still glued to the TV. “Why was it green and soft?
“Because I made with spinach and boiled eggs”
She looked at me “Wha….t?” “You tricked me!.”
“I didn’t trick you I thought you will know, but you liked it, isn’t it?”
“It was ok (she changed her version) but don’t ever make me eat eggs and spinach in a sabji“
She was referring ‘sabji’ to the cooked vegetables that we Indians usually eat it with chapati and rice. My plan did not work out quite as I imagined although in my heart I knew she has taken the first step. It is obvious once our mind decides something is disgusting or weird our body responds the same by shutting itself off to that food so its a constant fight to develop taste for it.
Without further ado let’s get to the recipe.
SPINACH AND EGG CROQUETTES
Ingredients:
1 cup cooked spinach (all water squeezed)
3 hard-boiled eggs, quartered
3 stale gluten free bread slices or 1/2 cup bread crumbs
1/2 tsp red chilli powder
3/4 tsp Italian seasoning
1/4 tsp garlic powder
salt as per taste
1/2 tsp amchur (dry mango powder)
For coating:
1 egg+ 1tbsp water
1/2 cup Gf all-purpose flour
1/2 cup bread crumbs
1/4 tsp Italian seasoning
canola oil for frying
To serve
Method:
- Combine bread crumbs and Italian seasoning in a shallow dish. Beat egg with water in a second shallow dish and in third one put Gf all purpose flour.
- Pulse bread slices in food processor. Add in spinach, eggs, salt, Italian seasoning, red chilli, garlic and amchur powder. Pulse few times, scrape sides and pulse again until just incorporated (try not to over mix).
- Transfer mixture into a bowl. Heat oil in a pan.
- Divide spinach and egg mixture in small portions and roll them into finger shapes.
- Turn croquettes first in flour, then in egg wash, then gently in crumbs.
- Fry 2-3 croquettes in medium hot oil, turning gently as they cook to deeply golden brown.
- Serve hot or cold with sambal dipping sauce.

Spinach is my fav though I don’t eat them raw. In fact, I had to stop from cooking spinach so often because my other half hinted, whether this is only veg the market sells.
This is so so good and I will make for our teatime snack, which is during the weekend. I can see how the croquettes are friend to perfection and paired with the sambal dipping sauce.

I love the look of te croquettes, as for kids eating habits I think that often they react to textures more than flavours, if I puree the spinach and put it into a curry they will happily eat it but if I cut it finely instead I will get no end of complaints. Same dish, same ingredients but completely different response, funny isn’t it?
