No more hikes , no more long walks. As the weather has become cooler I now spend my Sunday mornings indoors. The days are getting shorter and the air has a crisp that hints at the winter to come; which means sealed up windows, recirculated air and closed space where germs flourish and with it comes the advent of cold and flu season. Adding more fruits and vegetables can always defense us against fall and winter viruses but it does not always have to be soup, stew or chili. Another delicious way to get good nutrition is to juice or make smoothies.This morning I made this super healthy smoothie and had it for breakfast with besan cheela rolls.
Smoothies are a quick, easy and delicious way to have a mid morning snack or a breakfast on the go. They offer incredible versatility. You can use whatever fruits and vegetables you want, however there are some deeply pigmented foods that have higher antioxidant capacity than others. The recipe below make it easy to eat some of those rich colored foods. When they are blended together with a powerful blender they become delicious, easy to absorb and retain more fiber. We drink carrot juice a lot in winters. It is great for your energy levels, but sometimes the body simply needs more. This recipe combines the goodness of carrot juice with the amazing health benefits of parsley and tomatoes. I usually make carrot juice first with beet, celery, ginger and orange and add tomato, parsley and seasonal fruit later however you can also blend everything in a high speed blender to make this wonderful smoothie.
GINGER, TOMATO AND CARROT GOODNESS (serves 2)
Ingredients:
1 carrot, sliced
2 tomatoes, sliced
1″ piece ginger, chopped
1 cup fresh orange juice or water
1/4 beet, sliced
1 apple, sliced
1 stalk celery, chopped
salt to taste
3/4 – 1 tsp freshly ground black pepper
3 tbsp parsley
Method:
Add tomatoes, orange juice (or water), parsley and ginger to the high speed blender.
Give it a few pulses.
Add carrot, beet, celery and apple. Blend until smooth.
Check the consistency. If the smoothie is too thick, you can thin it by adding a bit of juice or water.
Pour out into glasses and garnish with parsley.
Enjoy!
Note: High speed blender blends even the stringiest produce into smooth liquid. If you do not have one, no worries, use a regular blender and then strain the smoothie.

I like blending juices, but have not tried adding ginger to it. I’m sure ginger gives the juices a different “dimension”. Gonna try the next time 🙂

This is similar in ingredients to a health shake i had in Jamaica once. They wouldn’t tell me proportions so I could recreate it. They may have used something instead of ginger, but I like the ingredients in this much better. I will try this soon! Perfect color for the season:)

Its been raining dogs and cats over here Bal. In fact, the weather is so bad and everyday we are stuck in traffic jam. Smoothies are perfect and I too go for carrots. They make a great de-tox and combined with other ingredients, I would love the smoothie as a start up to refresh and energize me.
