I know everyone is busy with the holiday baking, gift wrapping and parties to attend. In this busy time it gets difficult to cook elaborate meals for the family. You do not have to order ‘Take out’ every time you get into the kitchen for baking. There are short cuts you can take to create light and healthy lunches or dinner and can have a good time with family. Soups, salads and burgers can be some options. Almost everyone loves a burger and there’s nothing better than a homemade burger. So make these tasty and healthy chicken burgers, then enjoy few extra cookies after:)
I love how easy and quick it is to make a chicken burger even easier than my own bean and quinoa burger. You can actually stay on the good side of the calorie counter with these delicious burgers. All you need is ground lean meat, which is then mixed with spices to make it taste better. I added cooked mushrooms to provide extra flavor, moistness and fiber to lean chicken. I have been making burgers like this for years and they taste fabulous. It is important to follow some key rules (see quick notes) to ensure tender burgers. I keep a few in the freezer to pull out when I need to fix an easy school lunch for my daughter or make a last minute plan to watch a movie.
When you have a great tasting burger, you don’t need any special accompaniments or sides. Load them up with any vegetable, store bought or freshly made dressing from simple ingredients. I had some leftover spinach dip from last night’s party which I used as a dressing for the burger. It was simple yet tasted great with topping of raw onion, tomato and crisp romaine lettuce.
Quick Notes
- Use freshly ground lean meat in combination with vegetables such as mushrooms and eggplant.
- Let the mixture rest for 30 minutes in the refrigerator for flavors to develop.
- Use wet hands to form loose patties. Make a small indentation in the center to prevent doming.
- Take care not to cook them for long or flatten with spatula. Flip the burgers only once.
CHICKEN BURGER
Serves4-5
Ingredients:
- 380- 400g ground chicken
- 4-5 (2″) diced mushroom
- 1.5 tbsp chopped onion
- 1 tbsp lemon juice
- 1 tbsp minced ginger
- 1 tsp ground roasted cumin
- 1 tbsp chopped cilantro
- 1/2 egg, whisked (optional)
- salt to taste
- olive oil
To serve:
burger buns, tomato slices, romaine lettuce, spinach dip, raw sliced red onion
Method:
- Saute onion and ginger in 1 tbsp oil on medium heat. Add mushroom.
- Saute on high heat for 3 minutes. Remove from heat, once they are soft. let cool.
- Add all the ingredients to ground chicken. Use your hands and mix until incorporated.
- Cover with cling wrap and refrigerate for 30 minutes.
- Heat a non stick pan brushed with oil. Take about 1/2 cup of chicken mixture and shape it loosely into patties. Oil the burger on both sides and place it in hot pan.
- Cook them to your liking for 4 minutes on each side ( cooking time varies with thickness of patties).
- Clean the pan with paper towel after each patty is done.
- Sandwich burgers in buns with tomato, raw onion, romaine lettuce and spinach dip.

Actually eggplant make it more moist and you will not even see it. Mushrooms are my daughter’s favorite so that’s the main reason of putting them.

Amelia, you can have these as a double deck burger that’s why I make them 3/4″ thick . They are also good on their own, when earlier I could not make gluten free buns, I would only have them with salad.
