One of the things that I like about spring and summer is that it brings my favorite fruit, mango. I love to eat it fresh, ripe as it is and add it to all sorts of interesting desserts, bakes and savory dishes. Today, I have a beautiful breakfast recipe for you. If you want to do something special for your family but keep it simple this mango and rice pudding parfait is a perfect fit. This recipe should be on everyone’s to make list.

Going on digital free vacation is another one of my favorite things. Its not easy to but we do our best to unplug. There’s an interesting feature in apple phones that lets you to get calls from allowed contacts.
So, I was in in sin city with my family last week and had good time. However, we felt bad about leaving Truffles behind. Whenever possible we try to take him with us on road trips but sometimes it just does not work when we have to fly.
Truffles is our 5 year old Pomeranian- adorable, precious and spoilt who we all love with our heart but he loves our daughter more than my husband and me. He knows when it is time for her to come home from school each day. He will come down from her room and sit by the door waiting. Once she is home he follows her everywhere, jumping on her legs, softly barking for attention until she carries him up. If I pick him he looks at her with longing eyes and tries to release himself from my arms. If I tell him that I am going to kiss or hug my daughter, he will give a soft bark to back me off and jump in her lap so that I should not hug or kiss her. His strong bond with our daughter makes it difficult for us to leave him behind when we go for vacation.
This time we left him at our clinic, thinking that he is familiar with the staff and the premises. But when we came to pick him up we had to hear the same old story – he did not eat, drink, pee or poop properly. Well, how would he? He was missing being with his mommy. He follows our daughter’s routine. He wakes when our daughter gets up, if she’s not up until 10AM on Sundays he will sleep, too. He eats when she comes to eat, if she is not hungry he can go hungry as well. If she is stressed from schoolwork he looks more stressed. They are both so in tune with each other that sometimes when he rings the bell to go out to pee and my daughter does not want to get up to open the door, she tells him, “No baby cake, wait. Let me finish my work first”. He listens to her like an obedient boy and quietly sit besides her.
I have lived all my life with highly domesticated dogs, none of them was like Truffles. He understands every single word of our daughter, even though I am the one who trained him. He listens to me when he wants to otherwise he will walk away even if I use simple commands like “come” “get your ball”. He’s very gentle than many other Pomeranians, that’s why it makes us feel guilty when we can not take him with us. We give him his favorite toy and my daughter’s blanket so that he should not miss us but he will still be the same whatever we do. He just hates to be separated from our daughter. He can manage to stay happy and playful if there is a girl of our daughter’s age who can pamper him all the time, I remember leaving him once with one of our daughter’s friend, he was quite comfortable in their home and became friendly with their Pomeranian, too.
This whole pet leaving thing got me wondering whether you go through something similar when you go away. Do share your thoughts with me.
On our way back home from Las Vegas while picking some essential grocery, I saw ripe, fragrant mangoes in the market. I have a weakness for mangoes and when they are in season you can be assured that you will find them in my fridge all the time. The very next day I made this mango and kheer Parfait (of course I had to make the kheer first).
Parfaits are a beautiful addition to any breakfast table. They are usually made with Greek yogurt, berries and granola. This parfait is made by layering creamy kheer (Indian rice pudding), ripe mango and granola. It is as easy to make as it is indulgent; after preparing kheer and granola ahead of time, assembly takes less than 15 minutes, since you only need to layer the ingredients. I made kheer at home but you may use the store bought rice pudding. And also, I prefer my parfait crunchy so I added a layer of granola, which I always have at home. If you don’t have granola you can make crumble instead. I’ve given the recipe below for oats and almond crumble.
Layers of kheer, mango, and granola will have you making these over and over again this summer.

MANGO AND RICE PUDDING PARFAIT
Serves 3
Ingredients for parfait:
- 2 1/2 -3 cups thick cold kheer
- 2 ripe haden or Alphonso mango
- about 1 cup granola or crumble (recipe below)
Method for parfait:
- Roughly chop mangoes.
- In three wine or parfait glasses, spoon 3 tbsp kheer, layer with granola (or crumble) and then some mango.
- Repeat.
- Serve immediately.
Ingredients for crumble/ easy granola:
- 1/2 cup chopped almonds
- 1/2 cup rolled oats (quick cooking oats will work too but I recommend old fashioned rolled oats)
- 1 tbsp brown sugar
- 1 tbsp maple syrup
- 1 tbsp canola oil
Method:
- Preheat oven to 250° F. Line a baking tray with foil.
- Mix all the ingredients for crumble and spread it on the prepared sheet.
- Bake for 20 – 25 minutes or until golden brown.

I love mangoes and rice pudding and combined with these other ingredients sounds delicious!
As for our dogs my husband and I are going away for a few days and we made sure our daughter and son could arrange it in their work schedules to take care of them so we wouldn’t have to put them in a kennel. Since your pup is so small maybe if he becomes acquainted with a friend or family member you could leave him with them or to stay at your home. Mine have each other which helps so they have company. When alone I think it must be more traumatic. Hope he’s doing fine now.

Its true Vicki, small dogs adjust little hard. We had Alsatian and Doberman, whenever we went out of town, they stayed in home but we asked someone to take care of them. We do not have any family here, friends do help but we don’t want to ask every time because we own a vet hospital and there is a boarding area in it.
This parfait is an excellent dessert to relish when mangoes are in season.

Your Truffle is so cute and amazing in his behavior. We had Scooby, who was given to my son on his 4th birthday in a shoebox and eventually grew into a huge dog. He was truly his dog and would tease me by running away from me when I take him out. I had to call my son to bail me out. Hmmm…I am lost in thought now! Leaving him behind in Kenya was quite painful. So I am thinking twice about having a pet again.
This parfait is so colourful and pleasing. I like the texture combination in this and the wonder it would perform in our mouth.

OMG if I see the second picture last week, I might go out to get one puppy. My husband was in India for 2 weeks for work, and my kids and I were seriously thinking about getting a puppy and surprise him (more like shock him). He’s the only one who’s against the idea, that’s why we thought of doing it while he’s gone… at the end we couldn’t because I cannot be irresponsible that no one can take care of him/her when we travel for like one month every year… but that second picture of Truffles was a dangerously cute one. Beautiful! To me, mangoes are the peaches of the tropics! Here they are very inexpensive and free off of the trees. The surprise to me was that there are hundreds of varieties. Love mangoes in chutney too.
