I have taken bit of off time from posting because my niece was here to spend some time with us. I wanted her stay to be enjoyable and fun. Hence I completely kept myself away from computer.
During this period my darling daughter turned 18. Yes, soon she will be graduating from school. Time has flown so quickly. It seems like only yesterday she was playing with barbies and today she has grown up into a wonderful and remarkable adult.
Birthdays are special occasions in every person’s life. But ever since my mother died in May2004, her birthday was a quiet affair between family and very close friends. This year I wanted to surprise her not just for her 18th birthday but also for receiving outstanding youth award from city of Richmond. She made us proud and deserved a celebration. On the day of her birthday her cousins surprised her by coming over and then a couple of days later she celebrated with her own friends in a restaurant and then a day after we held a birthday party at our home with all our friends. I ordered mango cake and she especially requested me to make cream puffs.
I have never really made anything with pastry doux but I wanted to fulfill her request. And, whenever I am stuck I turn to Joy of baking’s site. She has videos that explains everything so nicely. The puffs came out nice and crisp but as they were not made gluten free I have a rice krispy recipe to share with you. When I was growing up my mother always made mumure (puffed rice balls made with jaggery) for my birthday because I loved them so much. I still love them and buy from Indian store but not often. Rice krispy treats are popular among kids and adults alike.
This recipe is a healthier alternative to the marshmallow rice krispie square as it uses honey, to sweeten and make the puffed rice cereal hold together. They are unbelievably easy to make and are packed with nutritious seeds and dried berries. Make them ahead of time, individually wrap them for easy storing or as a snack on the go. I stored them in the fridge, as they became soft and crumbly when left on the counter. Those that were in the fridge held the shape well. I made these for my daughter’s birthday treat bags. I got good feedback from her cousins and friends. I have already made it two times this month and thinking of making it again by adding little bit of sugar and increasing the nuts quantity.
Ingredients
- 4 cups puffed brown rice cereal
- 1/2 cup unsalted sunflower seeds
- 1/2 cup hulled pumpkin seeds
- 1/4 cup sesame seeds
- 1 cup dried berries
- 1 cup liquid honey
- 1/2 tsp sea salt
Instructions
- Grease a 13x9" baking pan. Set aside.
- Spread sunflower, pumpkin and sesame seeds on a rimmed baking sheet. Bake at 350°F until lightly toasted for about 6 minutes. Let cool.
- Transfer to a greased bowl. Add puffed brown rice cereal and mixed berries.
- In a saucepan boil honey, without stirring for 5 minutes.
- Stir into puffed rice mixture until well coated.
- Scrape into prepared baking pan, pressing to smooth and level top.
- Refrigerate until set about an hour. With greased knife, cut into squares.

It’s been quiet sometime since I’ve eaten some rice crispies 😛 Actually , these squares reminds me of the ones being sold here – too sweet and oily though but still delicious 😀

Anne dear, there is no oil in these rice krispies and I don’t think they are excessively sweet. You must be mistaking these from some other krispie.

I remember when graduation day was quickly approaching. Reminiscing about Barbie dolls and dress up for my daughter and matchbox cars and all the things little boys and girls do would put me over the edge crying knowing that soon they would be leaving for college. I thought I’d never survive – although thrilled for them it made me sad that they’d be leaving our little next to venture the world on their own. But I survived and so did they.

Your Rice Krispie treats sound similar to a Health Bar that I purchase and love. I can’t wait to try them. I don’t recall though ever seeing brown Rice Krispies though. Do you mean chocolate ones?

Thanks Vicki, my daughter is so much in love with Barbies and Ariel that she has box full of their stuff. I was also thinking what would I do if she moves out and study in a different town but thankfully she got a seat in the University she wanted and I am happy about her.
