If you haven’t tried any recipe from my blog, I recommend you to try pizza, for sure. Even though the rest of my family is not gluten free but we all love gluten free pizza. The fool proof gluten free pizza crust recipe that I make is egg free, can be made dairy free by using substitute for milk. The dough is super easy to handle, bakes well with nicely browned edges, something that’s difficult to get right in gluten free pizza.
I always par bake the pizza crust before putting toppings on it, and this time I baked it on pizza stone which was even better. I don’t know how to explain it but it was definitely better than the pizzas bases that are coming in the market and from those recipes that I have tried from books and internet. I have previously posted meat balls and curry chicken and kale pizza using the same crust.
Now that zucchini is in full season, I got fresh small zucchinis from my friend and the first thing I wanted to do was to make pizza. This is a perfect summer pizza generously drizzled with basil pesto, topped with zucchini and cherry tomatoes. I know you can’t see the pesto in pictures but it is there under stringy cheese and zucchini.
Simple and delicious way to use zucchini.
Ingredients
- 1x9-10" par baked pizza crust, recipe can be found here
- 2- 2.5 tbsp pesto (homemade or store bought)
- 1 small zucchini, cut into thin round slices
- few cherry tomatoes, halved
- handful of mozzarella
- salt and ground black pepper (optional)
- fresh basil leaves for garnish
Instructions
- Pre heat oven to 550°F or to the highest temperature.
- Heat pizza stone in the oven for 15 minutes.
- Place par baked pizza crust on parchment paper.
- Spread pesto evenly over the base. Sprinkle mozzarella cheese.
- Arrange the zucchini slices and cheery tomato halves over the pizza crust.
- Sprinkle some more cheese on top if you wish.
- Carefully slide the pizza onto the preheated stone in the oven.
- Bake for 8 minutes (broil for last 1-2 minutes if baking in an conventional oven) until crust and cheese are browned to your satisfaction.
- Garnish with fresh basil leaves and sprinkle black pepper. Cut into wedges, serve immediately.

if you are eating gluten free, you must try this. It is really really good. I make 2-4 pizza base and then freeze the rest for later use.
