I hope you are enjoying the gorgeous weather and the beautiful colors of autumn. One of the gifts that this season brings is the arrival of fresh local apples. Perfect on its own or in crumble, pies, crisp, chutneys or cider, apples just sparkle with flavor and goodness. Since it stated raining this week I decided to make a scrumptious apple crumble pie. It’s so amazingly delicious with classic flavors of fall.
Start by making the almond and oat flour crust. This recipe is modified and made gluten and egg free from Chatelaine. Once the crust is baked, fill it with sliced, cinnamony apples, top it with crunchy oats crumble and to complete the dessert I served with vanilla custard sauce. Sweet and delicious this makes and easy dessert for fall evenings. I don’t have much else to say. This is the first thing you need to make to celebrate the colors and the cool and crisp fall air.
Ingredients
- 1 1/4 cup almond meal
- 1 3/4 cup oat flour
- 3 tbsp unsalted butter
- 1 1/2 tbsp honey
- 1/4 tsp salt
- 4 cups, peeled and sliced gala apples
- 1/4 cup brown sugar
- 2 tsp corn starch
- 1 tbsp melted butter (optional)
- 1/8 tsp nutmeg
- 1/2 tsp cinnamon
- 1/3 cup oat flour or almond meal
- 1/3 cup large flake oats
- 1/4-1/3 cup cold unsalted butter, cubed
- 2 tbsp brown sugar
- 1/4 tsp salt
- 1 1/4 tsp vanilla custard powder
- 1 1/2 cup milk
- 1 tbsp sugar
Instructions
- In a food processor add all the crust ingredients and pulse for about 30 seconds.
- The mixture might not form a ball but it will be able to pressed together without crumbling apart.
- Press dough over bottom and up sides of a 8-9" pie plate as far as possible. Make sure the crust is even on bottom and sides.
- Bake in a 350°F oven for about 8-10 minutes. Remove from oven and let cool before filling. If any bubbles form in the crust, smooth out lightly when the crust is cool to touch.
- Stir oats with oat flour, brown sugar and salt in a medium size bowl. Add butter and work in, using your fingertips, until crumbly.
- Toss apples with corn starch, melted butter, brown sugar, cinnamon and nutmeg until evenly coated.
- Put apple mixture in pie crust. Sprinkle crumble mixture over apples.
- Cover edge with a pie shield or foil to prevent over browning.
- Bake at 350° for 35-40 minutes until the top is golden.
- To make vanilla custard, whisk sugar, custard powder and milk in a saucepan until well blended.
- Bring to full boil on medium heat, stirring frequently.
- Serve warm or cold with apple crumble pie.
