I am sure every kid grew up on some kind of instant noodles. In India Maggi noodles was the crave food as Ramen is in the west. I must say I fell in love with it when they were first launched with an Indian twist in early 80’s. It was not the healthiest food but was cheap, quick, simple to make and tasted good. It still is the same. My daughter loves it and make it whenever she isn’t in a mood to eat a full meal. The secret to this classic 2 minute Maggi noodles is its taste maker, that’s what makes it so addictive.

The reason I am sharing this recipe with you all is because my daughter told me to. After Canada temporarily banned the import and sale of Maggi noodles from India she is enjoying gluten free instant noodles with my homemade taste-maker. You may have heard it in the international news. The whole controversy began in march after some tests revealed excessive amounts of lead in the Maggi noodles. I am not sure how much truth is in this Maggi issue but whenever a food product comes under the strict scanner of government officials, it always has a positive impact. People become far more aware of what they are eating and what’s good for their health.
So, here’s a recipe to make your own masala taste maker and cook instant noodles the correct way. The recipe is vegan, gluten free and contains no unhealthy ingredients that can have a negative effect on your body. Since my college days I have been making random recipes with instant (Maggi) noodles all the time, because it’s delicious when you add the “right” stuff into it! I usually add in some chicken or egg with vegetables to make it more nutritious but today it is just the way kids like it.

A cheap, healthy and convenient recipe for those times when you don't really want to bother with cooking.
Ingredients
- 2 gluten free/ vegan (lotus) ramen noodle blocks
- handful of thinly sliced carrots
- handful of thawed frozen peas
- salt to taste
- 2 tsp (+) ketchup
- 2-3 tsp (+) homemade masala taste maker powder ( i use 3 tsp)
- 1/4 cup water
- 1 1/2 tbsp oil
- pinch of red pepper flakes
- 1/3 cup + 1 tbsp textured vegetable protein (nutrela granules)
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 2 tsp kasoori methi (fenugreek leaves)
- 8 cloves
- 2 black cardamom with shell
- 1 1/2 tsp red chilli powder
- 2 tsp turmeric powder
- 2 tsp garlic powder (McCormick's is gluten free)
- 1/2 tsp nutmeg powder
Instructions
- Take first 6 ingredients from taste maker list in a coffee grinder and grind into a slightly coarse powder.
- Mix red chilli, garlic, nutmeg and turmeric powder.
- Store in a small jar or container.
- Boil 4 cups of water in a pot. Add ramen blocks.
- When noodles begin to unfold, separate gently with a fork and reduce heat to a low boil.
- Continue to cook for 3 minutes or until noodles are just soft.
- Strain through a colander and rinse with cold water.
- In a small bowl, whisk homemade masala taste maker, ketchup and salt with 1/4 cup water. Set aside.
- Heat oil in a wok on medium heat.
- Add carrots. Saute for 1 minute. Add peas and taste maker solution.
- Let it simmer on low until you are left with half the water.
- Add the softened noodles, sprinkle red pepper flakes. Toss until noodles have absorbed the liquid.
- Serve warm.
Notes
The taste-maker will keep for up to a year if stored in an air-tight container. Although the flavor is at it’s best when freshly ground.

The noodles look so yummy, dear! I didn’t know instant noodles are so popular in India until the recent Maggie scare. I was surprised Nestle own 80% of the instant noodles market in India! I hope those in S’pore are safe to eat…….

That plate of noodles looks sooo good! Believe me, I grew up with tons of instant noodles (from packets as well as in those cups) and everyone loved them. I don’t eat it much these days but they do have a special spot in my heart and once in a while, it’s nostalgia and always so tasty! Love that you can use gluten free noodles and make your own seasoning like this.

this is again one of your awesome posts Balvinder Ubi, I never ever thought I could recreate the tastemaker that comes with maggi noodles. Now, I know I can. So, thank you for sharing. Yes, it has been such a sorry situation with maggi and its downfall. A kids favorite and mum’s favorite as you’ve rightly said for times when one doesn’t feel like cooking an elaborate meal. But now, here’s a healthy alternative. WOW.

Yay! Can’t wait to make this for my 7 year old daughter w/ celiac (she had a positive biopsy at the age of 3). We tried the lotus ramen, but the masala packets are no good. Can’t wait to try your masala taste maker! I also find the “types of flour” blog useful. We make our own garbanzo bean flour in our mill at home, but are too scared to try the desi channa due to cross contamination concerns. Do you think those are safe for people with celiac? How are they processed? (we can make our own besan in our mill, but need the desi channa to be safe from cross contamination first). I understand that there can be cross contamination also in the bagging process.

Oh thank you Shabnam 🙂 the tastemaker tastes exactly like the maggi MASALA flavor that we all are familiar with. You can even make changes according to your daughter’s liking.
I am not too sure about cross contamination in packing lentil and beans, I think they are fine but anything that is labeled gluten free is safe for people with celiac.

I just made this today for an after school snack and it was a big hit. Both my elementary school boys are begging me to make it again. I was shocked at how close the recipe came to Maggi’s! I did have to make a change. I needed to make it soy free so I used daliya (roasted chana/gram dal) in its place and it worked great (for us, lol). Thank you so much for the recipe! Do you make any other variations of it?

How much daliya would need to be used-is it like for like when replacing nutrela?

Daliya is gluten. I am not sure how it would taste in place of nutrela granules.
