As I was flipping through the most recent issue of chateline magazine I came across a gorgeous full page image of a monster cookie, topped with vanilla ice-cream! It looked crazy good yet so simple! After reading the description I knew I had to make this cookie. So I rushed to the kitchen to gather my ingredients and begin baking.
The recipe was all gluten by Nigella lawson and I adapted to suit my needs, like changing the amount of flour and converting to gluten free, reducing sugar and baking soda. I only had semi-sweet chocolate chips in my house, so that’s what I used. If you like a variety of chocolate chips or even nuts in your chocolate chip cookies, go right ahead and tweak to your preferences. The recipe was super easy, and so much fun to make. I whipped up the dough, baked and pulled out of the oven from start to finish, in less than an hour’s time. If you have kids around let them do all the work, I promise they’ll be so much happy to make and taste the result of their masterpiece.
I used a 9″ cast iron pan but you can use what you have at home. A bigger pan will give a thinner cookie, just adjust your cooking time. This is a great recipe to make when you are desperately craving a chocolate cookie, but don’t have a lot of time (or patience) to make a full blown batch. My family adored this big sized cookie that’s soft, gooey and slightly crisp on sides and top and loaded with chocolate chips. It is best served warm with whipped cream, chocolate sauce or vanilla ice-cream. In case you don’t eat all, wrap in plastic wrap in individually portioned pieces and store in a box on the counter. I noticed that the cookie gets a little more soft on the second day but still great for snacking.
Warm, soft and slightly crisp skillet chocolate chip cookie.Great for an afternoon snack or as an after meal dessert with ice cream.
Ingredients
- 127 g (1 cup) Gf all purpose flour ( I used brown rice flour blend)
- 52 g (1/2 cup) almond meal
- 80 g (1/2 cup+1 tbsp.) coconut palm sugar
- 3/4 tsp baking soda
- 1 cup semi-sweet chocolate chips
- 1 egg
- 1 tsp vanilla
- 1/2 cup butter
Instructions
- Preheat the oven to 350F.
- Combine almond meal, gf all-purpose flour and baking soda in a bowl.
- Grease a 9-inch cast iron pan with oil or butter.
- In a large mixing bowl, combine coconut palm sugar, butter, vanilla, and mix with a hand mixer.
- Add in your egg and mix well.
- Now add your flour, and mix until just combined.
- Stir in chocolate chips (reserve 1 tbsp.).
- Scoop your cookie dough into your cast iron pan and press down, Scatter the reserved tbsp. of chocolate chips on top.
- Bake for about 18- 20 minutes, until it is puffed, golden, and the edges have nicely browned.
- Let cool on wire rack for15 minutes, cut into slices and enjoy.

This is such a fun dessert to make and enjoy with the family…far less fuss than a cake. I am really drooling over that slice with ice cream! I’d love to whip up something like this when it gets warm enough for a little grilling and eating outside. It’s so nice you’re able to adjust the recipe and make it gluten free.
