The sweet potato spread/hummus came about one evening when I needed to prepare an appetizer to accommodate unexpected guests. As the weather is beginning to change and the march break is quickly approaching, it seems like a great time to share this spread recipe!
It’s not surprising to find potatoes or sweet potatoes in our house. As I have mentioned few times before that my in-laws live with us and their diet is a lot different. I mean they also eat simple food but they are more like potato people. They have never said this but I just know that my MIL puts potato in whatever she cooks. Besides, on her fasting days, that happen every third day of the week, she only eats carrots, potatoes or sweet potatoes. Hence It didn’t take long for me to think what I was making my spread with.
This recipe is so easy! Sweet potatoes are naturally silk textured and rich in minerals yet low in so you don’t have to add too many ingredients to get a good dip. All I did was boil sweet potatoes (you can definitely roast them), then I simply tossed them with chickpeas, lime juice, olive oil and salt into a blender or food processor and gave it a whirl. Oh and then I added some red pepper flakes and chopped celery. I will add roasted garlic next time for more depth in flavor. The end result was sweet, healthy and lime fresh sweet potato hummus with a gentle kick from red pepper flakes. You can serve it immediately after you make it or let it chill in the fridge so it’s ready to go whenever you are. Kids and adults will both love this spread over crackers with various vegetable topping.
Here’s a peek what my daughter did with the leftover spread.
This sweet potato spread/hummus is great served with crackers or toasted baguette slices.

Lovely idea, I make a spread using normal potatoes mixed with sour cream and herbs (delicious and good when having leftover cooked potatoes) but never made a spread with sweet potatoes. I will try this, I am making so many spreads all the time and I love a fresh idea.
