If there is one fruit that I can’t wait for to come in season, then it would be mango. Now that it is end of June and mangoes are at their peak in my neck of woods, sharing a dessert with you made sense. Mango ‘malai’ was one of many typical summer desserts for me and my siblings while growing up. It was quick, easy and the taste? Oh so heavenly!!!
I picked up a few juicy and sweet manila mangoes and decided to make this treat for my family. That first spoon took me right back to my childhood.
Nothing made me happier than having ‘malai’ with parathas. Most people would not think of eating malai on a daily basis, since it is very fattening. But I did until my youth. When I was telling all this to my daughter, she turned up her nose and said, Yuck!!!
So, what is MALAI?
Malai translates to milk fat in Hindi language. The milk sold in India is mostly from buffaloes and is not pasteurized. As a result, a very thick and rich layer of skin is formed when the milk cools after being heated on boiling point. This layer of fat is what we fondly call “malai or top of the milk cream. It is skimmed off, collected and used as the same way, we use whipping cream here.
This dessert is creamy, mildly sweet, mangolicious and pretty much irresistible, a high calorie though. You can limit the portion size but it is almost impossible to do that. It is SO GOOD that my daughter, licked the bowl clean and also had some day after ( I didn’t tell her the original recipe name just so she can eat and enjoy).
You can choose to make it with coconut cream or yogurt for low fat version but I like it with (malai) cream because this is the way I have eaten it right from my childhood.
This is a simple yet fancy dessert recipe that can be made ahead of time for a casual party or get together.
Creamy and refreshing dessert simply by folding mango into whipped cream,
Ingredients
- 4 cups mango, chopped
- 500 ml whipping cream
- 2 tbsp. sugar
- Mint leaves for garnish
Instructions
- Add sugar to 3 1/2 cups of chopped mangoes. Reserve the other half cup for topping.
- let it sit for 10- 15 minutes till the juices of mango come out. Lightly mash with the back of a spoon.
- Whip cream until soft peaks form.
- Gently fold cream in mango.
- Spoon it in dessert glasses or bowls. Chill for an hour.
- Serve with a topping of fresh chopped mango, decorated with mint sprigs.
