Although I hate to see summer’s gone away, I enjoy the crisp mornings followed by the warm afternoon and cooler nights. It is the season, when apples and other late harvest fruits are ready to be mixed with warming spices then transformed into pretty desserts.
Since my daughter have really started to prefer healthier desserts to those laden with sugar and calories, so I am kinda trying to give healthy twist to traditional recipes. I caramelized apples for our Friday night dessert and served with pistachio yogurt cream. Not only did it taste delicious but baking the apples made the house smell lovely.
Apples are one of the most heavily sprayed fruits, so it is important to purchase organic apples. I used large, firm royal gala apples, but any sweeter variety would work great for this recipe. Start by washing and drying your apples. Core without peeling. Then slice into thick rounds, somewhere around 1/4″. You can use a mandolin if you’d like – but if you have a steady hand, it’s not really necessary. Toss apple slices with a mixture of sugar, & cinnamon. Try to distribute the spice and sugar as evenly as possible, rubbing it into the individual slices by hand if necessary.
Pour warm melted coconut oil. Toss everything together lightly. These caramelized apples won’t be syrupy, sugary and thick like most recipes, since I used minimum amount of sugar and baked them. They will be much lighter but still have the comforting cinnamon scent and flavor you’re looking for. Place the apple slices on the cookie sheet lined with parchment paper. They can be spaced closely together, making sure there is no overlapping. I like to bake two trays at the same time. Position your oven racks in the second and fourth (6″ and 10 1/2″ from the top). Rotating the sheets half-way through the baking process helps all the apple slices to bake evenly and beautifully.
You can eat these caramelized apples with anything you fancy. My favorite being vanilla ice cream, and of course this pistachio yogurt cream. Either way, it’s delicious.
Tender, flavorful and evenly browned apple slices-perfect when served with pistachio yogurt cream.
Ingredients
- 3 large organic gala apples
- 2 tbsp. coconut palm sugar
- 2 tbsp. coconut oil, warm
- 1 1/2 tsp cinnamon
- 200 ml whipping cream, chilled
- 50 g Greek yogurt
- 1/3 cup chopped pistachios
Instructions
- Whip the cream and yogurt lightly in a bowl until it just holds its shape but is not stiff at all. Fold half of the pistachio nuts into it, refrigerate without covering (it will stiffen a bit).
- Line 2 baking sheets with parchment paper.
- Position oven racks in the second and fourth (6" and 10 1/2" from the top) slot, and preheat at 375.
- Combine sugar, and cinnamon in a small bowl. Mix until ingredients are well-incorporated.
- Wash apples thoroughly, core, then slice into thick rounds (not more than 1/4").
- Toss them with cinnamon sugar, gently rubbing into the individual slices by hand.
- Pour warm coconut oil and stir well to coat the apples.
- Line up the apples on your lined baking sheets and bake for 45-55 minutes, watching for caramelization and browning around the edges.
- To bake both the sheets evenly, rotate halfway through ( two times if needed) and flipping the apple slices once in between.
- Serve warm with pistachio cream and sprinkling some extra pistachios on top

How nice of you to explore and make different types of desserts for your daughter and family. I can almost smell these apples baking, too, and it really is the scent of fall. I like eating fruit as a substitute for dessert (or with dessert!) and I know this is simply tasty and satisfying.
