A voice in my head said It’s about time to post a cookie recipe. So, I followed the voice and bring you a chocolate chip cookie recipe. I have two on the blog already ( here and here), but I decided to also share a version that is not only gluten free but also refined sugar free, dairy free, egg free and nut free.
Before I tell you how delicious these cookies are, first things first … let’s start from the beginning. A lot of readers had asked me if I had any baked sweet treats on my blog with no eggs. I’ve created all sorts of recipes over the years but, unfortunately (for them), none of the treats were totally free of eggs. So, I had to purposely make something that has no eggs.
I did have to experiment a bit to come up with what I believe to be the best combination of wholesome ingredients, and texture. The recipe is great and actually pretty healthy. Packed with rolled oats, millet flour, ground chia, coconut oil, coconut palm sugar, and dark chocolate chips, these cookies are sure to please. Of course they’re not vegan because I also used manuka honey to sweeten them, but they are dairy-free and egg-free.
Manuka honey give these cookies a distinctive golden brown color, adds a bold flavor and keep them delicious. You may notice a slight bitter aftertaste but not overwhelmingly so. My daughter did not like the cookies immediately, but started loving it after having one or two. It was only when she approved that I made another batch and decided to post.
The recipe makes 20 medium size cookies. While they are quite different from the average chocolate chip cookie, they are nutritious and offer an amazing soft, light, scone like texture that you will really love. They are not overly sweet and each and every bite has plenty of chocolate chips in it. They are perfect with your cup of tea or coffee or when a sweet craving hits.
If you’ve never used manuka honey in baking before, then this will be the perfect recipe to try something new.
But, what even is Manuka honey?
Manuka Honey is rich, full-bodied and has slightly bitter touch that tastes delciately spicy like caramel. It comes from New Zealand, made by bees who pollinate the manuka bush. It is not as outright sweet and liquid-y as regular honey.
Manuka honey is believed to have immune boosting properties. All honey in general has some antibacterial qualities, but Manuka has an additional and measurable antibacterial potency known as Non-Peroxide Activity (NPA). Unfortunately, not all manuka honey is created equal. To ensure that the Manuka honey you are buying is authentic New Zealand honey, look out for the UMF rating. The UMF, Unique Manuka Factor, is a quality trademark and grading system that helps identify and regulate the presence of NPA (Non Peroxide Activity) in Manuka honey. Typically, manuka honey with NPA between 5 and 9.9 are labelled UMF 5+,which is ideal for cooking and baking. The higher the UMF number, the stronger and pricier the honey. Those are actually considered medical grade honey.

Ingredients
- 1 cup (Bob's red mill) millet flour
- 1 cup GF rolled oats
- 1/2 cup Gf all-purpose flour (the blend I use has xanthum gum in it)
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup refined coconut oil (no need to melt)
- 2 tbsp ground chia seeds
- 3 tbsp water
- 1/3 cup manuka honey (vegans can use golden syrup)
- 1/4 cup coconut palm sugar
- 2 tsp vanilla extract
- 1 cup bitter sweet chocolate chips (milk, nut and gluten free)
Instructions
- Whisk together the ground chia seeds and water until well combined. Set aside for 15 minutes.
- Combine millet flour, gf all-purpose flour, rolled oats, salt, baking powder and baking soda in a bowl.
- In a large bowl, using an electric mixer on medium speed, beat the coconut oil, coconut palm sugar, manuka honey, chia eggs, and vanilla extract until blended.
- Slowly add the flour mixture and mix just until incorporated.
- Switch to a wooden spoon and stir in 3/4th cup of chocolate chips. Reserve 1/4th cup to put on top.
- Chill dough in the fridge for 30 minutes or 10 minutes in the freezer.
- Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper or silpat.
- Using a medium ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets, spacing the dough mounds 3 cm apart (as these cookies will only spread slightly).
- Flatten the cookie dough balls down slightly with fork. Stud each one with a few (reserved) chocolate chips,
- Bake cookies for 12-15 minutes, or until golden brown on top.
- Remove from the oven and let the cookies cool on the baking sheet for two minutes before removing to a wire rack to cool completely.
- Store cookies in an airtight container at room temperature up to 1 week.
Notes
If you'd like to replace honey in this recipe, I've successfully made them using 3/4 cup coconut palm sugar. In this case add some orange juice or milk to get the right consistency of cookie dough.
