I am extremely fond of sweet potatoes, how about you? Their sweet, custard like texture is just so delicious. To start the day in a healthy and tasty way, here is a very simple sweet potato breakfast. I thought this might be the perfect post to share in times of crisis with ingredients from the pantry. But honestly – this recipe is just so easy, and good that I make it all the time.
If you didn’t already know, Sweet potatoes are root tubers , which are high in carotenes and cholesterol lowering compounds. They are most often sold with orange or white flesh, but there are others that come in purple, yellow, white, pink, and red. The deeper the color of the skin, the richer it likely is in beta-carotene (or anthocyanins for purple varieties). In addition, sweet potatoes are a great source of dietary fiber, that fills you up without filling out your hips and waistline.
This recipe requires minimal ingredients and minimal prep work yet delivers so much flavor. The best way to cook sweet potatoes (in my opinion) is to bake them in oven or air fryer. While baking or air frying takes at least an hour than cooking in a microwave or instant pot, it’s mostly hands-off time and the results are really worth it. You can do the baking part several days in advance and reheat the sweet potatoes in air fryer or microwave before eating.
The perfect baked fluffed sweet potato for a simple and healthy breakfast. And, for those like me who can not swallow them in chunks.
Ingredients
- sweet potatoes
- mint, chopped ( I had it in my garden but you can use any dry herb)
- salt, black pepper and red chili powder to taste
- lemon juice (optional)
- warm honey (optional)
- roasted walnuts ( or your choice of nuts or seeds)
- olive oil (optional)
Instructions
- Scrub the sweet potatoes clean under running water and dry with a dish towel.
- Pierce all over with tines of a fork and then rub them with a bit of olive oil.
- Wrap each sweet potato individually in aluminum foil and place on the Air fryer wire basket, making sure to leave some space between them and not stacking them
- Air fry at 375 degrees F for 45-60 minutes (depending on the size of your sweet potatoes),
- The sweet potatoes will be ready when you can easily put a knife in them. If you feel them too hard, continue cooking for another minute.
- Remove potatoes from air fryer and let cool for 5 minutes. Split potatoes in half with a knife.
- Scoop out the pulp of each baked potato in a bowl.
- Add salt, red chili powder, lemon juice (as per taste) and some chopped mint. Fluff with a fork.
- Then spoon the fluffed mixture back into the skins.
- Sprinkle few walnut pieces and drizzle with warm honey.
- Preheat oven at 400 degrees F.
- On a baking sheet, (lined with foil for easy clean-up if you wish) place the pricked and oiled sweet potatoes.
- Bake for 45 - 60 minutes or until potatoes are fork tender.
- Follow step 7 on wards.
Notes
Oiling the sweet potatoes isn't necessary but if you have bought organic potatoes you can enjoy eating the skin. The skin, however, will not be crisp while reheating, if you are cooking them in advance.
