Everyone love chicken drumsticks. They are big meaty wings, you can flavor them anyway you want and serve them with a yummy dipping sauce. I give you this dry spice rub oven-roasted chicken drumsticks with mango sauce. Simple, healthy and full of flavor. Although you can eat chicken drumsticks on its own, but I highly recommend you to pair it with mango sauce- it might just surprise you.

We love chicken around here and these days I have been pretty much-roasting chicken every week. I find that by doing so, I have the makings for a healthy lunch or dinner especially for my daughter, who has recently entered the job market. Working a 12-hour shift as an RN ( Registered Nurse) leaves her exhausted. Even though she doesn’t say it, I can see her tired face when I pick her up from the sky train station. I know It will take some time to get used to the work environment. So with roasted chicken in the fridge or in the freezer ready to go, it’s easier for her to fix a salad or a wrap or a bowl meal combining the fresh ingredients or other leftovers.
These oven-roasted chicken drumsticks are spicy and utterly delicious, we had this on father’s day. I have been making these for years now, and the recipe never disappoints. Though, I try to be creative every time, because it would get boring to serve the same thing over and over again. When I was making them this time I was looking for a way to serve with some kind of fruity sauce. So Inspired by my mango salad dressing recipe I came up with this mango sauce. It tastes amazing and perfectly balances the heat from the spicy roasted chicken and makes them taste even better.
This recipe starts by making a dry rub of spices and herbs in a bowl. Then the spice mix is rubbed all over chicken that has been drizzled with olive oil. It is so easy, takes only a few minutes of prep and about 35-40 minutes of bake time. If you are using a gas grill, the chicken drumsticks will get done around 25-30 minutes, flipping every 5 minutes (Check the grilling instructions in this Moroccan Spiced Grilled Drumsticks recipe). The dry rub creates a nice seared texture and adds tons of flavor in every bite.
What to serve with oven-roasted Chicken Drumsticks and mango sauce?
You can serve this with any kind of side dish you like. Quinoa, rice, salad, or veggies. When it comes to vegetables, I love some simple steamed broccoli or roasted mix veggies, or potatoes or whatever I have on hand in the fridge.
I had a couple of drumsticks in the freezer which I ate yesterday with quinoa tabbouleh, zucchini sabzi, falafal and carrot slaw salad (I didn’t add the lemon mustard dressing in the slaw because of the mango sauce).
An easy recipe for chicken drumsticks with savory spice rub and flavorful mango sauce.
Ingredients
- 3 lbs. (10) chicken drumsticks
- 1 1/4 tsp Himalayan pink salt
- 2 1/4 tsp red chili powder
- 1/4 tsp kashmiri chili powder (for color)
- 1 tbsp garlic powder
- 2-3 tsp coriander powder
- 2-3 tsp ground cumin
- 2-3 tsp dried mint leaves (or any herb)
- 2-3 tsp dried parsley leaves
- 2 ripe mangoes (2 cups diced), peeled and pitted
- 1 shallot, (2 tbsp) chopped
- 1/16th tsp turmeric
- 2 Thai chilies
- Salt to taste
- 1 tsp fresh ginger, grated
- Freshly ground black peppercorn
- 1-2 tablespoon apple cider vinegar (you could substitute white vinegar)
- 1/2 cup water or broth
- 1 tbsp. honey
- 2 tbsp olive oil
Instructions
- In a small bowl, stir together all the spices and herbs. Set aside until ready to use.
- Wash chicken drumsticks and pat them very dry with paper towels (this will help the skin to crisp)
- Make slits on the thickest part. When ready to bake, preheat oven to 425°F. Lightly grease a baking sheet with nonstick spray.
- Place the chicken in a large bowl, drizzle with oil. Sprinkle the spice rub evenly over the top . Use your hands to massage it into all of the chicken drumsticks, coating evenly.
- Arrange them on the greased tray and bake in the preheated oven for 20 minutes, flip sides and bake for additional 15 to 20 minutes or until cooked.
- Rest the chicken for 5 minutes before serving.
- When the chicken is in the oven, make mango sauce.
- Heat oil in a medium saucepan over medium-high heat. Add shallots, ginger and cook until slightly changing color.
- Add remaining ingredients and cook until mango is soft (4-5 minutes) and mixture has thickened. Remove from heat and let cool for 5-7 minutes. Place mixture in a food processor or blender and process until smooth.
- Remove in a bowl and serve with spicy oven roasted chicken drumsticks and any other side of choice.
