My post today was supposed to be about chicken, Roasted chicken with sauce to be exact which I made it on the weekend. Instead I am sharing my daughter’s salmon spread that I had it for lunch for two days in a row. I haven’t had a good gluten free bagel in a long time so when I saw little Northern bakehouse bagels at our Costco location, I bought it. I enjoy all their gluten free line of products.
In my pre gluten-free days I used to eat bagel sometimes for lunch with avocado spread, nut spread or cream cheese but making a salmon spread never occurred to me. I had no idea it can taste so good over a bagel. My daughter was home the last few months and she made what she fancied to eat and I got to eat it, too.
This salmon spread is easy to make and wonderful to keep on hand in the fridge for a healthy, satisfying lunch ready to go. To make, you need canned wild sockeye salmon for a fabulous nutrient rich taste and flavor. One thing you should know is that most types of canned salmon contain skin and bones. Everything is edible but I take out the spinal bone and the skin, and leave in the tiny bones. They mash up easily. If you don’t like it you can pick them all out however it takes some time. Then add in mayonnaise, lemon juice, pumpkin seeds, red onion, jalapeno, cilantro and ton of freshly ground black pepper. Mix it all up, and serve it on a bagel, or a toast, or in a pita, or a lettuce wrap, or just eat it with a spoon. Any way you eat it – its just delicious and makes a great quick meal for summer lunches.
The best thing about this recipe is that it is so easy to customize. If you are not a mayo fan, substitute for Greek yogurt! Not loving the red onion? Add finely diced spring onion or celery instead. Need a little more heat? Add a sprinkle of chili powder or a spritz of sriracha.
Healthy and delicious salmon spread
Ingredients
- 1( 7.5 oz ) can salmon (I used wild sockeye), well drained
- 3 tbsp mayo
- 3 tbsp red onion, chopped
- 1 jalapeno, finely chopped
- 3 tbsp pumpkin seeds, roughly chopped or keep them whole
- Salt and freshly ground black pepper to taste
- 1 tbsp lemon juice
- 1-2 tbsp cilantro
- 2 Gluten free bagels
Instructions
- Break the salmon into large flakes into a medium size bowl (removing any bones or skin).
- Fluff the salmon with a fork
- Add the red onion, pumpkin seeds, jalapeno, mayonnaise, lemon juice, cilantro, salt, and black pepper.
- Mix well and serve on a whole grain gluten free bagel with salad.
Notes
Almost all salmon cans contain little bones and pieces of skin from the fish, you can leave it in. They are very soft and unnoticeable in the spread if you crush them with a fork and add it back. You can also pick out, but this will take time.
