We road tripped to Whistler over the BC day long weekend along the sea to sky highway. I knew we will be indulging in not so healthy foods so I thought to take some healthy bits to nibble on for the journey. I made beet root crisps. They are a favorite in our house. I’m so happy that I am finally sharing it with you today.
I feel so grateful to have beautiful places to visit in BC when COVID 19 has put international travel on hold. Whistler is an absolute dream place for anyone who love the outdoors. It’s a town north of Vancouver British Columbia, renowned for skiing, snowshoeing and snowboarding in winter and mountain biking and hiking in the summer and of course walking in all seasons.
On our way we stopped at Squamish, it’s a gorgeous slice of heaven. My husband and his buddy hiked the sea to summit trail and we women took the Gondola up. I had been to Squamish before but haven’t taken the Gondola ride. There are several small trails at the top of mountain from very easy to hard levels. We did three short ones while waiting for our husbands to finish their hike. The views from the top and the great suspension bridge were all awesome. But today this post is about Beetroot Crisps… shall write more about Squamish and also Whistler some other time.

So onto the recipe, beetroot is more usually associated as winter vegetable, but it’s in spring and summer that it is at its best and sweetest. You can find various varieties of beetroot, the most popular being red and yellow. Beetroots are a great addition to salads, soups, drinks, desserts, and other dishes, like these crisps offering Vitamin C, Vitamin K, iron, antioxidants, fiber, and numerous trace minerals.
If you want to get your kids to eat a whole beetroot, I suggest you crisp them. I sliced thinly with a mandolin, sprayed with oil and air fried for 25-35 minutes. My advice is when they are getting close to being done keep a close eye on them. They can go from perfect to scorched in a short time.
These beetroot crisps are sweet and crispy. Seasoning with a healthy dose of salt, pepper and herb allow them to shine even more and will disappear in a flash, I kid you not.
Healthy Beetroot crisps. Make a handful them in 30 minutes.
Ingredients
- 4 beets, skin peeled
- 2 tbsp olive oil
- Sea salt to taste
- Pepper to taste
- 1 tsp mint powder or 2 tsp finely chopped fresh mint
Instructions
- Using a mandolin, slice beets into very thin slices (2mm is ideal, mine are 3 mm). Alternatively, you can use a sharp chef’s knife to slice up.
- Line a baking sheet with paper towels and arrange the beet slices on the towels in a single layer. Top with another layer of paper towels and press down firmly. Set aside for 10 minutes to allow the beets to dry (this is an important step to rid the beetroot with most of the moisture).
- Brush beets with olive oil or spray on both sides.
- Arrange them in air fryer basket in single layer, touching or overlapping a tiny bit.
- Set Air fryer temperature to 325°F & cook for about 35 minutes (depending on thickness), until roasted to your desired crispness (moving the beet slices every few minutes to ensure they are not overlapping).
- When the beet slices are slightly crispy remove them to a cooling rack. They will get crispier as they cool.
- Immediately sprinkle with salt, pepper and mint powder.
- Repeat with remaining beets.
- Preheat oven to 375°F , and line two baking sheets with parchment paper.
- After step 3rd, Lay the beetroot slices in a single layer and bake for about 20 minutes.
- Flip the slices and bake for another 20 minutes.
- Take them out and let them cool and harden up and enjoy
Notes
Rid any dampness on the beetroot (from washing) or else it will cause the beetroot to steam rather than crisp.
The cook time on these beet crisps will vary depending on your air fryer brand and the thickness of your sliced beets. If some are getting crispier faster than others pull those out
