I have another green beans recipe for you today in a pasta dish for the perfect go-to summer meal. I’ve had this packet of black bean pasta sitting in my pantry for months. I thought it would be nice to cook it with summer ripe tomatoes, green beans, lemon and herbs because I really wanted to use the garden produce I had on hand.
Black bean pasta is made using flour from black beans. Pasta made entirely of black beans may sound weird, but the texture is great and it doesn’t smell or taste like black beans at all. It is a perfect alternative to flour pasta. I do eat regular pasta, but not frequently. I love getting the some extra nutritional benefits that these alternative pastas offer and enjoy the feeling of satisfaction after eating it. Just make sure you read the label before you buy as some of these pastas are often made of a mix of refined flour and then a touch of vegetable or legumes are added for flavor and color.
Black bean pasta is very fragile and cooks very quickly. It doesn’t clump like rice pasta (unless you highly over cook it) and has a really nice bite to it. So get ready for this delicious black bean spaghetti recipe.
This recipe comes together in under 20 minutes. Thinly sliced garlic, and green beans get cooked down in some olive oil. I sliced up the green beans with scissors at a slight diagonal, which to me looked more appealing. Then I added cooked pasta (thin black bean spaghetti in this case) along with lemon juice, salt, black pepper, lemon zest and fresh basil and parsley. I tried to bump up the flavor of the dish a bit more by adding sriracha. If you like and have time, add a little protein like I did with boiled eggs. Just before serving I topped with fresh chopped tomatoes (since more color and nutrients is always a good thing). The pasta turned out flavorful and hearty.

Tasty black bean pasta recipe with sweet summer-ripe tomatoes, lemon-basil zing and tender green beans.
Ingredients
- 100 g black bean fettucine or spaghetti ( I used from Liviva)
- 150 -200 g green beans, trimmed
- 2 garlic cloves, thinly sliced
- 2 tbsp lemon juice
- 1/2 cup fresh herbs (basil and parsley)
- 2 tsp (+) sriracha
- 1 tsp black pepper
- Zest from half lemon
- 1 cup tomatoes, chopped
- Salt to taste
- 4 boiled eggs or any protein of your choice
Instructions
- Cook black bean spaghetti according to directions on package, about 3-4 minutes in boiling and salted water ( I boiled for 3 minutes).
- While the spaghetti is cooking, slice green beans diagonally with knife or kitchen shears.
- In a saucepan sauté garlic in olive oil then add the green beans and lemon zest. Stir fry for a minute.
- Add lemon juice and sriracha. Drain spaghetti and immediately add it to the saucepan and toss to combine.
- Add fresh herbs. Taste pasta and season with salt and black pepper.
- Top pasta with chopped tomatoes and serve immediately with your choice of protein.
