I haven’t had much time this month to take photos of food, but I had a couple of photos in my phone of this simple salad that I made for our weeknight dinner sometime last month. It features brussels sprouts, carrots, onions, apple, and, cranberries…but it’s mostly an idea for how to combine and enjoy the perfect salad in the raw stage.
Brussels sprouts, like their brassica brethren, are astonishingly good for you. They are high in antioxidants, which help in cholesterol reduction and are also good for heart and bone health. They are one of the most versatile winter vegetables. They can be roasted, steamed, stir fried, grilled or even shredded for salads just as I used in this recipe. Two things set this shaved Brussels sprouts salad apart: the grape vinaigrette…and the addition of tart cranberries along with roasted pecans. Over the past months I have made this salad with lots of different combinations of vegetables, but always the same dressing and topping of pecans and cranberries. It has been delicious every time. The grape vinaigrette is slightly spicy and salty. It’s delightful, especially if you don’t like your salad dressings on the sweet side. The grapes add just a little bit of sweetness. Not sugary sweet just natural sweet.
I paired this delicious shaved salad with some oven-roasted chicken and it was a tasty & filling meal that my whole family enjoyed. Customize the ingredients to make the perfect salad for you and your whole family. This is one salad that you have to give a try. Don’t skip the roasted pecans. It adds a nice crunch and takes the shaved Brussels sprouts salad over the top.
Ingredients
- Brussels sprouts (10 per person)
- Add ins
- Thinly sliced purple onion,
- Thinly sliced green apple
- Frozen Cranberries (thawed)
- Carrot, julienne
- Raw Pecans
- Salt and pepper to taste
Instructions
- Make grape vinaigrette - Recipe here.
- To toast pecans, spread them in even layer on a microwave safe plate.
- Microwave on high for one minute at a time until the nuts are browned and aromatic.
- Cut the root end off of each sprout. Remove any tough outer leaves that are loose or look like they may be either dirty or rotten.
- Cut them in half lengthwise.
- Slice thinly, either with a slicing blade on a food processor or with a really sharp knife.
- Put the thinly sliced brussels sprouts in a mixing bowl and loosen the pieces.
- Add the other ingredients in salad to taste.
- Drizzle grape vinaigrette. Season to taste with additional salt and pepper.
- Serve right away, and enjoy!

That’s a nice salad, never had made salad with brussel sprouts before so this is new for me. Not a fan of brussel sprouts when eating them whole or cut in half but shredding it like that will remove my fear of it. I will definitely give this a try.

I like the idea of shaving brussels sprouts into a salad! I agree, they are super nutritious and I actually really love panfried brussels sprouts with a bit of bacon – but it’s hard to talk the kids into eating them that way sometimes, so this variation is great. oh yum we love brussels sprouts in this house so this would be a wonderful salad but maybe later in the year when they are available. summer is not the best time for them:)
