Peanuts, though legumes, are one of the most prized nuts. There is no end to how they can be used in Indian cooking. They not only add crunch to a plethora of preparations but can also be used in curries, butter, snacks, and whatnot. Possibly my favorite way to enjoy peanuts is in snack form. If one is not allergic to peanuts then these are great to keep handy – whether as a nibble for a party, to pack up and gift to friends, or just to have around as a snack.
These air fryer peanuts are super easy to make and crispy with minimal oil. The key to making them crispier is to first soak overnight, then dry them well as much as you possible (they should feel dry to touch and crunchy to eat as sprouts). Next dry roast, and lastly toss the peanuts with oil and seasoning. Since peanuts are high in fats you do not need oil to roast them but you do need a little oil if you want to coat them with spices.
The process is a little time-consuming so you may be wondering if the preparation steps are really necessary. Soaking legumes in water overnight make them more digestible and enhance their nutritional benefits. Peanuts, just like chickpeas, kidney beans, and soybeans can be problematic for some. So, believe me, it’s worth taking that extra step and the best option to indulge in the traditional deep-fried taste of peanuts without any guilt.

The best part of this recipe is that it can be prepared well in advance and can be stored for up to 30 days. I love making these peanuts in big batches and just keeping them handy. But trust me they will be gone before you realize. They’re terrific with drinks. You can also pack them in snack bags and take them along on a road trip as a snack on the go.

Ingredients
- 4 cups high quality skin-on raw peanuts
- 1 tbsp sea salt
- 2-3 tsp olive oil
- Sea salt to taste
- Peri-peri spice + Dried mango powder
- Salt + garlic powder + oregano or basil
- Salt + cumin + smoked paprika
Instructions
- Rinse peanuts and soak them in filtered water leaving room for expansion.
- Stir in salt. Allow to stand covered on the counter for about 8 hours, or overnight
- Rinse peanuts to remove salt residue and spread out in single layer on a cookie tray lined with kitchen towel to dry. The drying time can take from 6 hours to 12 hours depending on the climate you live in. You need to remove as much moisture as possible form the peanuts, which will help make them crispy.
- Place two-three handful of peanuts in single layer into the air fryer basket, being sure not to crowd the fryer basket.
- Set the time for 325 degrees F for 11 minutes.
- Halfway through cooking, pause the Airfryer, gently shake the basket or use a wooden spoon to stir the peanuts, which will ensure even air frying.
- Continue cooking.
- After 11 minutes, test a peanut to see if it's done enough for you. Depending on your air fryer, the softness of your peanuts, and your personal preferences, you may want to cook them an additional 3 to 5 minutes.
- Once the peanuts are crispy, transfer to a plate or bowl.
- Air fry the next batch.
- Toss the peanuts with olive oil and sea salt.
- You can make these air fryer peanuts your own by varying your seasonings.
