Oatmeal is an easy, healthy, and low calorie breakfast option for many people around the world. It may look bland and unappetizing, but when paired with fruit it almost tastes like a dessert! And, It keeps you full and energized, as well.
Stone fruits are in their glory right now and I couldn’t resist sharing this plum oatmeal recipe on blog and video on YouTube. Because I think plums are too underrated and need more love in everyday recipes. They are not just tasty and have gorgeous color, but they are incredibly nutritional powerhouses and are great in cooking and baking!
If you are an oatmeal fan, then this recipe is for you. If you aren’t try this and you’ll likely be a fan too. Traditional oatmeal is cooked on the stove instead this easy breakfast oatmeal recipe is baked in an air fryer. It can be prepped ahead of time and is super simple to throw together! Plus it’s healthier, more affordable, and can be customized any way you like. I made this oatmeal with plums and pistachios for my husband and me. The plums combine nicely with the oats and the result tastes amazing and is so pretty. It is naturally sweetened and perfect for starting the day off right.
This fabulously plum oatmeal is way better than packets of instant oatmeal or standard stove-top oatmeal. You might find the baked method easier and much better than a standard stove-top! Sometimes, you just have to try different methods to see what combinations or technique works best for you. That’s exactly how this baked oatmeal came about. With quick GF oats, almond milk, banana, flax meal, and plums all mixed in a bowl and then poured in a prepared baking dish, I pulled together a spectacularly healthy breakfast that resembled a plum cake.
You can store this baked plum oatmeal in an airtight container in the refrigerator for about 4-5 days. Then when you are ready to enjoy a healthy breakfast, simply pop in the microwave for a minute or so. It tastes just as good as when freshly made! You can add a portion into a bowl and top with almond milk and maple syrup or coconut palm sugar before serving.

Quick Notes
- If you don’t have an air fryer, don’t worry! You can always oven-bake this oatmeal.
- Use GF quick-cooking oats for best results. However, old-fashioned rolled oats work as well. You may just have to add a little more milk and alter the cooking time a bit.
- I prefer to make it with dark red plums, but any type you like will work. Use firm ones, not soft over-ripen ones as they don’t cut well and don’t hold their shape as well. If the plums are not sweet add sweetener of your choice.

Ingredients
- 1 cup quick cooking rolled oats
- 1/3 -1/2 cup mashed banana
- 1/2 tbsp flax seeds meal
- 1/2 tsp baking powder
- 1 cup unsweetened almond milk plus extra for serving
- 1/8 tsp ground ginger
- 1/16th tsp (+) ground cloves
- 1/16th tsp(+) nutmeg
- 2 plums, diced plus 1 sliced for topping
Instructions
- Mix mashed banana, almond milk, baking powder, flax seeds meal, ginger powder, cloves powder, nutmeg, and oats in a medium bowl.
- Add in diced plums. Mix.
- Grease a 5-6" wide ovenproof bowl. Pour the oats mixture in it.
- Top with plum slices.
- Place the bowl in air fryer basket. Set the temperature to 350 deg F for 20 minutes.
- Check after 15 minutes. It will be done if the skewer inserted have just a few crumbs sticking.
- Bake for 3-5 minutes until the top is golden brown.
- Allow it to cool for 5 minutes.
- Scoop out a portion into a bowl and top with almond milk before serving.
