Banana bread is the ultimate fall comfort food and it’s easy to see why. It works as breakfast, dessert, and anything in between. We love this banana bread so much that I bake it several times between October and March. It is rich, warming, comforting, and aromatic..all at the same time.
Perhaps the best thing about banana bread, though, is that it’s one of the easiest baked treats to make. Easily made with accessible ingredients, such as bananas, sugar, flour, eggs and chemical leaveners. It’s also an economical and delicious way to use up overripe bananas languishing in the fruit bowl. You can stash the blackened bananas in the fridge or freezer until you’re ready to use them in baking.
What’s especially great about this recipe is that it comes together in one bowl and is packed with chai spices! I find myself turning to Chai spices to warm me up on cool fall days. This banana bread is a must-make this season and you will love how simple the recipe is too! Most banana bread recipes have the same formula, roughly: (½ cup) butter (or oil) + 1 cup sugar (white or brown) + 2 large eggs + 2 or 3 mashed bananas + 1-½ cups flour + 1/2 teaspoon baking soda + 1 tsp baking powder, 1/2 teaspoon salt. Since this is a gluten-free banana bread the amount of the ingredients will slightly vary. I used a mix of almond flour, dark buckwheat flour, and tapioca starch to make this bread a little heartier. Used melted butter, as well as yogurt and the texture of the finished bread, comes out especially moist and soft. Plus, adding a balanced ratio of warm cozy chai spices takes the flavor over the top. I just can’t have fall without this chai spiced banana bread!
This banana bread freezes beautifully too, so it’s always a good idea to double the recipe just so you can stash some in your freezer. I simply slice the banana bread into individual slices and then wrap each one in plastic wrap and store it in an airtight container so that I can get one slice out at a time.
You can eat the banana bread as-is but I do recommend to warm or toast the slice, then spread a generous amount of salted butter …..delicious! Or if you want to get real fancy, you could serve it with whipped cream. You can find the video for the banana bread on my YouTube Channel.
Ingredients
- 100 grams (1 cup) finely ground almond flour
- 60 grams ( 1/2 cup) arrowroot powder
- 50 grams ( 1/3 cup) dark buckwheat flour
- 1/3rd cup butter, melted
- ½ cup strained yogurt or sour cream
- 2 eggs
- 120 g (¾ cup) coconut palm sugar
- 1 cup mashed ripe banana, about 2-3 bananas
- 1/2 tsp baking soda
- 1 tsp baking powder
- heaped ½ cup chopped walnuts
- 1/2 tsp cardamom powder (8-9 cardamom)
- 1/4 tsp ground cloves (6 cloves)
- 1/4 tsp nutmeg
- 1/4 tsp ginger powder (optional)
- 1 tsp cinnamon
Instructions
- Preheat oven to 375° F. Grease loaf pan.
- Sift all the flours, chai spices, baking powder and baking soda in a bowl.
- Mash up bananas in a large bowl and measure out 1 cup. It’s important to use exactly 1 cup of mashed bananas for the right texture.
- Add melted butter, sugar, eggs, and yogurt to the mashed banana. Stir together all the ingredients (watch my banana bread video on YOUTUBE for guidance).
- Mix in the flour until combined. Pour into greased loaf pan.
- Bake for one hour or more, until a toothpick inserted in the center comes out clean.
- Let cool in pan for about five minutes before removing to a rack.
- The bread is delicate. Cool it completely before slicing.
- It freezes beautifully, just be sure to wrap it well. First in plastic, then in foil.
