With summer arriving quickly, I thought to share this super delicious Watermelon Salad that I had been enjoying while I was in India last month. It is one of those fruit salad recipes that are insanely easy to make at home. You hardly need a recipe but I’ll give you one anyway 😀. It may come in handy for some. You can also watch the video.
So cooling and refreshing, this salad is pleasant to eat for a light lunch. Especially on those days when it’s so hot that you barely have an appetite! I basically added masala paneer in cubed watermelon instead of feta. Masala paneer provides a savory and spicy bite to sweet watermelon. Masala paneer is very easy to make at home and you can check the recipe here. Besides that I squeeze fresh lemon juice over the top, drizzle on extra-virgin olive oil and add torn fresh mint, Himalayan pink salt, and coarse black pepper for a kick of flavor. Mmm…I can’t say enough good about this salad.
You can make this salad a day ahead and store it in the fridge. I recommend draining off some of the watermelon juice and sprinkling fresh mint before serving. The fresh mint adds just the right amount of zing and color. Though it’s perfectly OK to add it before if you are taking it for office lunch. It will wilt and darken a bit but would be perfectly fine to eat.
This watermelon salad and masala paneer salad would be absolutely lovely for your next brunch, barbecue, picnic or potluck.

Ingredients
- You may notice I'm not giving you the amount of ingredients in the recipe. This is not a mistake! You can use whatever amounts you like based on your taste. You can also watch me make this salad in a video.

- Seedless watermelon cubes
- Masala Paneer squares ( Recipe here)
- Himalayan pink salt
- Coarsely ground black peppercorns
- Extra virgin olive oil
- Lemon juice
- Torn mint leaves
Instructions
- Place watermelon cubes in a bowl. Add other ingredients.
- Serve right away, and enjoy!
