Indian cuisine has many kinds of flatbread, both leavened and unleavened. Tikkar, also known as pyaaz tamatar ki roti, is simply a rustic flatbread with veggies, spices and herbs, originating from the Indian state of Rajasthan. This roti is simple, quick to make, healthy, and super tasty! Wonderful for breakfast or as a light lunch.

Tikkar roti is made with a spiced dough of Whole Wheat flour and Corn/Maize Flour (Makai ka Atta). It is a good source of protein and other nutrients. To make it gluten free I use oats flour, sorghum flour, maize flour, sorghum and gram flour. The proportion of flours used is your personal preference. Onions, tomatoes, cilantro, green chili and spices are added while kneading the dough and also sprinkled on top. This is what makes these tikkar rotis taste so delicious. I usually don’t make plain roti at home. I always mix different flours and add some (raw or cooked) veggies or even leftover daal. These variations make every day roti healthier.
Unlike other flatbreads, tikkad roti is made slightly thick than the regular plain rotis, that keeps them soft and can be enjoyed even when cold. Hence they are a good travel food. You will find that the edges are often a little uneven which is typical of this roti due to the texture of the gluten free multi flour dough.
Tikkar Roti can be served with any daal or curry or simply enjoy with a pickle or chutney of your choice. I love to eat with a side of shrikhand (sweet yogurt) in this summer heat.

A spicy unleavened Indian flatbread with tomatoes and onion.
Ingredients
- 1/2 cup oat flour
- 1/4 cup maize flour
- 1/4 cup besan
- 1/4 cup sorghum flour
- 1 tbsp flax meal
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 3/4 tsp salt
- 1 tsp ginger garlic paste
- 1/2 tsp coriander powder
- 1/3 tbsp chopped onion + 1 tbsp or more for topping
- 1 tsp chopped green chilies
- 1/4 cup cilantro + 1 tbsp or more for topping
- 1/4 cup chopped tomato + 1 tbsp or more for topping
- 1 1/2 tsp oil+ more for cooking tikkar
Instructions
- Combine oat flour, maize flour, besan, sorghum flour and flax meal in a bowl.
- Add turmeric powder, red chili powder, salt, ginger garlic paste, coriander powder, chopped onion, chopped tomato, chopped green chilies, chopped cilantro and oil.
- Mix roughly with your hand.
- Knead a soft dough using only as much water as required to bind the dough. You do not want the dough to be too soft
- Let the dough rest for 5 minutes.
- Heat a tava and line a plate with kitchen napkin in the meanwhile.
- Divide the dough into 4 small balls.
- Now take one dough ball on a rolling board lined with plastic.
- Pat it with your hand till it is 5" in diameter. Apply water to your hand for spreading nicely.
- Gently place the roti on the tawa. (Do not worry it won’t break or stick to your hand if your hands are slightly wet). After few seconds check with a spatula if the roti is showing some light marks on the cooked side. Turn it over.
- Let it cook. Use tongs or spatula to turn it over and brush oil or ghee. Flip again and cook the oiled side.
- Cook the other rotis the same way.
- Serve with butter, yogurt and pickle.
