It’s those warm, lazy, hazy days of summer which means we want meals that are simple and fast, yet also healthy and delicious. These Turmeric Fish Skewers on a stove top grill pan are just that. Add in a side of fresh salad or serve over naan, and you have a simple and flavorful meal that’s perfect for a summer night. I also created a step-by-step video to show you exactly how I cooked these cod skewers.
I enjoy baking fish, or making curry now and then but fish skewers are not one of my specialties. Though today I made an exception. In this simple recipe, the turmeric fish skewers come together in no time and make for a flavorful meal that tastes like summer.
The marinade for the skewers is based on my Grilled salmon steak recipe. It is a combination of yogurt, lemon juice, garlic, and spices. It takes about 5 minutes to prepare and adds great flavor dimensions that make these skewers completely irresistible. With fish, you generally don’t need to marinate things for too long. Some of the thick firm-flesh fish, such as halibut, salmon, tuna, and swordfish, can handle a longer marinating time but not cod. I marinate the cod for just 10 minutes. Even with a short time in the marinade, the cod will soak up tons of delicious flavors.
When assembling the skewers, make sure the cod is cut into equal-sized cubes (about 1 1/2″) so it cooks evenly. If you use wooden skewers, soak them in water for 30 minutes before using them to prevent burning. When threading the fish pieces on the skewers it is essential to thread the pieces loosely, rather than smush them tightly together. This will allow the fish to cook evenly in between the pieces. I was thinking of adding veggies on the skewers to break up the color but then I wasn’t too sure if they cook up at the same time. Also, use two skewers to keep the fish from spinning while you cook.
You can have these skewers with pretty much any side that you like, we had them over naan as you can see. I spread mango chutney on the warm naan, then added crisp salad and the cod chunks. It was the ultimate combination of textures and flavors.

Ingredients
- 1 1/2 pounds firm white fish (I'm using Cod)
- 1/3 cup yogurt
- 3 tbsp lemon juice
- 2 tsp Bengal gram flour (optional)
- 3 crushed garlic cloves
- 1 tsp red chili powder
- 1 tsp turmeric powder
- Zest from 1 lemon
- 1/2 tsp carom seeds (optional)
- Chopped cilantro for garnish (if desired)
- GF Naan
- Salad
- Mango Chutney
Instructions
- Cut the fish into 1 ½ inch chunks for skewering.
- Soak the wooden skewers in a shallow bowl of water for 30 minutes.
- In a large bowl, whisk together yogurt, lemon juice, zest, garlic and spices under the marination.
- Place fish chunks in the marinade. Toss and coat each piece with the marination.
- Cover with plastic wrap and let sit for 10 minutes on the counter.
- Dry the skewers slightly and thread the fish onto the skewers.
- Heat grill pan on medium high heat. Brush with oil or cooking spray to prevent sticking.
- Immediately place 2-3 cod skewers on the grill. Cook for 5 to 6 minutes, rotating, until grill marks appear, and fish is flaky.
- A bit of the fish might stick to the grill, use fish spatula to loosen a bit. Also, the less you turn them, the less this will happen.
- Warm naan or any other flatbread on a hot griddle pan or warm in the oven, this will make it more pliable.
- Spread each naan with mango chutney. Top with crisp salad and cod chunks. Fold and eat using your hands.
