I’m always on the hunt for simple recipes that taste delicious and can be prepared in limited time without having to use difficult to source ingredients. Today I’m sharing one such dish straight from the West Indies and more precisely from Haiti: Poul nan sauce, literally means, chicken in sauce. Poule nan sauce is a flavor rich haitian dish with chicken, fresh vegetables, herbs, and spices. It is the easiest dinner recipe, perfectly served with rice, naan, or dinner rolls. I found the base recipe in Gregory Gourdet’s book “Everyone ‘s table”, which I altered a little since I can never follow a recipe, and it turned out well. This is an easy, straightforward recipe, requiring only a few and easy-to-come-by ingredients. And the bonus is you need just one pan.
The cooking style used in Haiti is predominately Creole and includes heavy use of hot pepper in many of their dishes. Besides peppers, Haitians use bouillon cubes, herbs and a seasoning base called epis. My recipe does not include epis or bouillon cubes, but it has all of those flavors.
The chicken is first marinated in a mixture of citrus juices and garlic before being cooked for an incredibly tasty sauce dish. I used Thai chilies and a mix of red chili powder as scotch bonnet or habanero peppers are not always available here in my supermarket. Be mindful that the recipe for this chicken makes it spicy. However, you can easily adjust the chili part to your personal preference.
The dish is so good, you will end up making it again and again, at least I cooked this several times in a very short period. It is fast enough for a weeknight but special enough for the company.

A dead simple Haitian chicken recipe cooked in one pan with citrus juice, herbs, vegetables, and spices.
Ingredients
- 2 lbs. (900 g) chicken drumsticks
- 2 tbsp lime juice
- 1/3 cup freshly squeezed orange juice
- 1 tsp cumin powder
- 1 tsp thyme
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp red chili powder
- 1tbsp salt
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 2 cup half-moon onion slices
- 1/3 cup tomato paste
- 2 heaped cup sliced mixed color bell pepper
- 1 1/2 cup chicken broth or more
- 1 habanero pepper or 3-4 Thai chilies
Instructions
- Put the chicken pieces in a large bowl and season with the salt. Squeeze the citrus halves over the chicken, then rub the cut sides of the citrus against the chicken. Add the spices and herbs. Mix. Cover and marinate in the fridge for at least 12 hours or up to 48 hours.
- Heat the oil in a wide pan. Remove the chicken from the marinade. Cook the chicken drumsticks, occasionally turning, until the skin is deep brown, about 8 minutes. Transfer the chicken pieces to a plate. Remove darkened piece of chicken from the pan, if any.
- Reduce the heat to medium low, add the onions. Cook for a couple of minutes then add some water to remove the bits and pieces from pan.
- Next add tomato paste, and cook, stirring often, until it turns a little darker, about 3 minutes. Add the bell peppers and cook, stirring occasionally until the peppers soften slightly and take on a little color, about 8 minutes.
- Return the chicken to the pan, in a single layer, then take a minute to pile the peppers and onions on top of the chicken. Then evenly pour in the reserved liquid from the marinade sauce, and chicken broth. Cook it covered on medium low until the sauce has thickened slightly and the meat pulls off the bone with a gentle tug from a fork, about 15 -20 minutes. Garnish with parsley and serve.
