Transforming delicious food from leftover rice is something very common in every household. When we were kids, we ate rice patties, at least a couple times a month in our school lunch or as snacks. My mom would change the ingredients each time and we loved them so much. I make them occasionally, but it’s still a wonderful way to use up leftover rice. These hearty rice patties are made with simple ingredients, which you probably already have in your pantry and fridge. You may have had rice patties with a ton of ingredients and with egg, but these are slightly different, more budget minded version. They are easy to make, vegan and completely satisfying. Vary your rice patties to suit the contents of your fridge, your taste, and your meal. I’ve made these rice patties with carrot, zucchini, scallions, and cilantro. If you don’t buy scallions use regular onion instead.
Smaller rice patties make an elegant appetizer or side dish, while larger ones make a nice meal, with a side salad or grilled meat or fish. A dipping sauce made from yogurt, lime juice and zest tastes really good with these.
Here are some ideas on what I do with leftover rice
- lemon rice – This is what I prepare most times. It’s tempered rice, with mustard seeds, curry leaves, peanuts, lemon juice and cilantro.
- Or Fried rice – Add some veggies, sauces and scrambled eggs and transform leftover rice into Fried rice.
- Curd Rice – It is often made with leftover rice or precooked rice that has been cooled down completely. The rice is mixed with fresh yogurt, and some basic tempering ingredients.
- Kheer – A simple and delicious dessert made with rice, milk, sugar, and flavoring.
- Arancini – These are stuffed rice balls, coated in breadcrumbs and deep fried until crisp. An oozy mozzarella center inside these rice balls makes them quite irresistible. I make them only when my daughter asks for them.

Crisp and delicious, this recipe is great for repurposing leftover rice you have on hand.
Ingredients
- 2 1/2 cups cooked brown rice (mine were flavored with cloves and black cardamom)
- 1 /2 cup grated carrot
- 1/2 cup grated zucchini (no need to squeeze out)
- 2 green chilies, chopped
- 1/4 cup chopped cilantro
- 2 tbsp buckwheat flour or besan or rice flour
- 3/4" piece ginger, grated
- 2 green onion, chopped
- Oil to shallow fry
- 3/4 thick homemade or Greek yogurt
- 1 tbsp lime juice
- Zest from one lime
- Salt and pepper to taste
- 1 tsp sugar or to taste
Instructions
- Combine Greek yogurt, lime juice, lime zest, salt, pepper, and sugar. Stir well. Refrigerate untill needed.
- To prepare the rice patties, coarsely grind the rice. Mix all the ingredients (except oil) in a bowl.
- The mixture should not be too soft, or else the patties wont retain their shape.
- Heat some oil in a frying pan.
- Take some of the rice mixture between your hands, roll it and then shape it into round patties.
- Fry the patties on both sides until golden brown.
- Transfer the patties to a wire rack or paper towel.
- Repeat until all of the mixture has been cooked, adding oil to the pan as needed, and serve hot with lime crema.

Very interesting and tasty! I grew up with leftovers transformed in tortillas….we beat the eggs and then added leftover rice, pasta, or anything , and fried in a pan…then we sliced them and ate with salads….your patties look very good with the taste of Indian spices!!….Enjoy your holidays and have fun!!…..Abrazotes, Marcela

Leftover rice is very handy to have in the fridge tho I usually put it into a frittata! So probably not your thing, with the eggs 🙂 Your patties sound like a great idea.
