I’m excited to introduce our all-time favorite summer dessert, one that really epitomizes summer, in my opinion. Not to mention, light, simple and extremely delicious! I’m revisiting the recipe from a while ago because I make it often and my family and friends love it, so I wanted to get better photographs to share with you all.

Almost every child growing up in India remembers the unmitigated joy of eating variety of mangoes in hot summer afternoons. Mango is a fruit that can be enjoyed in salads, desserts, savory meals or as a sanck by simply sucking at the fruit itself. If you haven’t had the delight of sucking a mango before don’t be disheartened, my lip smacking mango dessert will take you to a world of immense pleasure. It’s amazingly simple and can be prepared in minutes.
Aamras, is a popular dessert from western belt of India across Gujarat, Maharashtra and Rajasthan. Aam means ‘mango’ and Ras means ‘juice or pulp’. Aamras is basically flavored ripe mango pulp. While it is traditionally made with alphonso mangoes but other varieties that are juicy and pulpy can also be used. The pulp is generally extracted by using hands and passed through muslin cloth to remove any fibrous strands. However, now a days, we cut the fruit and just blend in a blender. It is usually savored alone as a dessert or accompaniment to pooris, missi roti or parathas. Pooris and parathas are an occasional treat in my home, but some desserts are meant to be enjoyed with a savory pairing. Hence, I serve finger licking aamras in little bowls garnished with chopped seasonal fruits and homemade masala chips. It give us the same pleasure of sweet and salty combo that we are accustomed to.
What’s your favorite sweet/salty combo?
Ingredients
- 2 large ripe mangoes
- 1-2 tbsp. icing sugar (optional)
- 2 tbsp. water or milk
- Small pinch saffron
- 3/4 cup strawberries, and mango, diced- for garnish
- Corn tortilla
- salt, red chili powder and garam masala as per taste
- oil for brushing
Instructions
- Dissolve saffron in warm water or milk for 15 min.
- Peel the mangoes and remove the flesh from the pit. Chop the mango flesh into large chunks and place them in a blender along with saffron liquid and icing sugar (if using, I haven't used any). Squeeze the mango pits and skins over the blender to extract as much juice as possible.
- Puree the mixture until it is smooth. Adjust quantity of liquid or milk as needed. Aamras needs to be a thick and smooth.
- Pour into serving bowls and refrigerate for two hours or overnight.
- Before serving garnish with fresh fruits and serve alongside masala corn chips.
- To make masala corn chips, preheat the oven to 375 degrees F. Line a baking tray with aluminum foil or parchment paper.
- Brush both the sides of corn tortilla with oil. Sprinkle salt, red chili powder and garam masala.
- Cut it into triangular pieces.
- Spread it on the prepared baking sheet.
- Bake for 9-11 minutes or until golden and crisp.
- Enjoy the rich taste of aamras with fresh seasonal fruits alongside masala corn chips.
Notes
Adjust sugar as per taste. If mangoes are sweet enough you may skip sugar completely.

You can use any mango but it should not have those fibrous strands. that thread like texture is not good for puree.

Mangoes are my fav too and I can eat this fruit either as it is or cooked/prepared any which way. The best among the rest will be the Thai mango salad, the spicy, sweet and tangy flavors all in one.

We’re certainly having a huge amount of mangoes on my daughter’s tree this year, and so far all I’ve made is shakes and eating the fresh juicy fruit. Oh yum I too love mangoes – Sadly I’ve not been in a mango growing part of the world during mango season but I really enjoy mango season here (they are shipped down from our tropical north) but I loved it in the UK when the mangoes were shipped from India and Pakistan and huge boxes would appear at the local Asian grocers. There would be quite a build up for the couple of weeks prior and them all of a sudden they would appear, and there would be much discussion as to what part of the sub-continent grew the best mangoes. Personally I thought they were all great.
