It’s strawberry season and that means it’s time for strawberries and cream, I mean Eton mess. You’ll love this simple, delightful, no bake dessert. I gave it a healthy twist by making Eton mess with Greek yogurt instead of whipped cream and very less sugar. As always you’ll find the video on my YouTube channel.
Eton mess is an iconic British dessert, where whipped cream, meringue, and strawberries are layered and served in a beautiful delicious mess. The Eton part of the name is derived from Eton College where it was (apparently) traditionally served at the annual cricket match between Eton and Harrow. The “Mess” comes from how the dessert is constructed; folded together to look a bit, messy.
Strawberries are traditional in this dessert, but you can make changes depending on what you have on hand and what is in season. I use locally grown strawberries which taste out of this world. They are juicy and sweet, and drip bright red juice when you cut them. I only buy strawberries in the summertime – the grocery store ones just don’t compare. I give the strawberries a quick “marinade” which is vanilla extract, and a sprinkle of sugar, just to pull out more juices.
Eton Mess should be served right away to avoid being a soggy mess. But since assembly is relatively fast, you can keep all the components ready ahead of time. I used maple meringues which I usually buy online to make this fast! They are very delicate and not as sweet as the ones made with sugar.
Using two glass bowls, I layered the dessert, beginning with the strawberries and then alternating with yogurt, and ending with the strawberries. That’s it. Strawberry Eton Mess in its purest and simplest form.
I’ll be serving this delicious dessert on July 1st (of course I’ll make it again). I know it may seem unconventional for Canada day but its red and white colors inspired me to do something fitting for the occasion. Plus, both countries still have strong connections 🙂

Easy Eton mess, a delicious Summer dessert, with strawberries, Greek yogurt, and maple meringues.
Ingredients
- 150 g fresh strawberries
- 1/2 tsp sugar
- 1 cup Greek yogurt
- 1/2 tsp vanilla extract for strawberries
- 25 g meringue cookies ( I used maple meringues)
Instructions
- Remove the tops of strawberries (i do with a straw) and cut them into halves or quarters. Toss in sugar and vanilla extract.
- Let them macerate for 15 minutes to pull the juices out.
- In a medium bowl whip yogurt with a spoon. Add meringue cookies. (if your cookies are big break them into small pieces.
- Gently fold, taking care not to smash the meringue up too much.
- In your desired serving glasses or bowls, begin with two spoonfuls of strawberries, then with yogurt and meringue mixture. Continue this pattern until each glass is complete. Top with a few meringue cookies.
