I absolutely love parathas, especially Gobhi (cauliflower) and Methi (fenugreek) roti/parathas, and I already have recipes for both of these on my blog. However, today I’m introducing something a little different—a grain-free paratha! I know what you’re thinking: “Is that even possible?” Well, yes, it’s true. These flatbreads are not only grain-free, but they’re also low-carb, vegan, keto, and diabetic-friendly. You can watch the video how I make.
I started making these after I bought shelf-stable cauliflower rice from Costco. It was a convenient option that I could quickly use whenever I needed it in a stir-fry, flatbread, or simply as an alternative to rice. But months (almost two years) have passed, and I haven’t seen those packages in my area. Now, I make them with freshly riced cauliflower. The interesting thing about being a gluten free food blogger is that we get to be creative with our food.
You’re going to love these not only for being a healthy, low-carb version of the popular Indian flatbread, but also for how easy they are to make. You won’t need any special equipment or unusual ingredients. The main ingredient here is cauliflower. I’ve used freshly cooked Methi (fenugreek leaves), but you can also swap it for dried fenugreek leaves or even cooked spinach. There are several options for binding Keto flatbreads. I’ve tested with both psyllium husk powder and xanthan gum. Both work well, but for this particular recipe with so much cauliflower, I prefer xanthan gum and flax meal. The outcome is great and not gummy, which can be an issue with some recipes. Just be sure to use very little xanthan gum.
This Gobhi Methi Keto vegan paratha tastes great on its own with ketchup and a cup of tea. But I usually make a batch and store them in the fridge to have with an egg omelet, yogurt, or avocado for breakfast. They’re delicious for anyone who is mindful of carbs. Sometimes it’s nice to switch things up.

Ingredients
- 1 1/2 cup fresh cauliflower rice (check my video how easy it is)
- 1/2 cup blanched almond flour
- 1/4 cup coconut flour
- 1 tbsp flax meal
- 1/2 tsp xanthun gum (you could add more but this is good amount to bind in combination with flax meal)
- Salt and black pepper to taste
- 1/4 -1/3 cup cooked Methi or 1 tbsp dry fenugreek leaves
- 1 chopped Green chili
- 1 tsp grated ginger
Instructions
- Mix all your ingredients together in a large bowl and bind into a dough (You won't need water as there is enough moisture in cauliflower).
- Break your dough into 4 equal pieces and roll into small balls. Flatten each ball like a patty. Place the patty on a silpat or between two sheets of parchment or wax paper. I prefer to use a Ziploc bag. Cut the two sides of the Ziploc bag.
- Preheat a non stick pan or tawa on medium heat.
- Place patty between the Ziploc, press down with hand and roll with a rolling pin. Flatten a ball into a round disk. Shape slightly with hand to make it round, no need to be perfect (its not important but I like to keep it round).
- Carefully lift the Keto roti/paratha, along with the base layer of the Ziploc (check out the video for clear understanding).
- Turn it over onto left palm and easily peel off the plastic. Now place it on preheated tawa or pan.
- When one side slightly looks cooked, turn over and cook the other side till you see some brown spots. Apply ghee or oil. Flip again to cook more and check the other side if it is cooked.
- Transfer cooked Gobhi Methi Keto paratha to a napkin lined plate or in a casserole. Repeat the process for other Keto parathas and serve warm.

Those look really great! I cannot eat cauliflowers but I really LOVE them…actually all the veggies from cabbage family, so I usually suffer a whole week if I eat some…then I will stop for a month or two, then start eating them again LOL terrible me!

Hello Angie, I’m glad you mentioned that! Some people have difficulty digesting cruciferous vegetables, and I can relate. I also experience symptoms like vertigo, which I mentioned in one of my previous post. One thing that has helped me is taking 2-3 Beano tablets before eating them. It helps with digestion and can prevent bloating and discomfort. And I also avoid eating any other cruciferous vegetables for the rest of the day Hopefully, that helps if you ever want to give them another try!
